My favorite things to cook
I love cooking traditional foods from different countries. Its so exciting to experiment with new tastes and techniques.
Some of my favourites are:
- Moroccan lamb and apricot tagine
- Baklava
- Bobotie (a spicy minced beef dish with raisins, chutney and egg custard topping - cape malay in origen)
- Anything requiring yeast - I love kneeding dough - great for tension release -both sweet and savoury bakes.
My cooking triumphs
I feel that every meal you have made is a triumph if it was made with love and if everyone enjoyed it.
A triumph for me is when you have unexpected guests and you still manage to get something gorgeous and scrumptious on the table. I once had to feed a horde of people at short notice and with a couple of boxes of penne, bacon bits, parmasan cheese, tinned mushrooms and cream I managed to satisfy everyone. A simple tomato, onion and cucumber salad accompanied the meal.
My cooking tragedies
For my 30th birthday I asked an indian collegue's wife to prepare a traditional lamb birjani for me. I still don't know why she brought the prepared food 5 days early. I had no option but to freeze the whole (huge)dish, aluminum pot and all. Unfortunately the birjani did not defrost in time for the party and the only option was to scrape frozen food off the edges and reheat individual portions in the microwave. Lesson learnt - LARGE containers take about 24 to 36 hrs to defrost!!!
