Actually Delicious Turkey Burgers

They actually were delicious! My husband (who was VERY skeptical) thought they were great as well. I used seasoned salt instead of regular salt and added a few shakes of White Worcestershire Sauce. Topped with lettuce, tomato, onion and bacon. YUM! My 17 month old loved hers, too!

Chicken or Turkey Tetrazzini

Yummy! I scaled the recipe to four servings. I cut two chicken breasts into bite size pieces and sauteed them in olive oil until cooked through then removed them from the pan. I used the same pan for the onions and garlic and loosened all of the brown bits left from the chicken from the bottom of the pan. I added a half cup of milk as others suggested, used egg noodles and topped with cheese before baking instead of adding for the last two minutes. I also used more onion than called for because we love onions! Sprinkled with some bread crumbs before baking as well. It was creamy and delish! I was afraid it would have that canned soup taste, but it didn't. Pleasant suprise.

Au Gratin Party Potatoes

I have finally found a recipe for au gratin potatoes that we love! I scaled this down to serve 4. Instead of cubing the potatoes, I thinly sliced them and boiled them with 2 cloves of crushed garlic for about 7 minutes before mixing with the other ingredients. I also used half and half instead of evaporated milk. They were creamy and delicious! My husband said never to buy the box au gratin potatoes (his usual favorite)ever again!

Italian Bread Bowls

I use this recipe every time I make a creamy soup like potato soup or beer cheese soup. I halve the recipe and put everything into the bread machine on the dough cycle. I then shape them and let them rise and then bake as directed. I completely skip the cornmeal and eggwash and we never miss it. Chewy and yummy!

Cheesy Ham and Hash Brown Casserole

We halved this recipe and had it for breakfast. Soooo rich, but delicious. Not really my husbands taste. I think it was a little too heavy for him, but I loved it!

Twice Baked Sweet Potatoes

After baking the potatoes I ended up just scooping out all of the potato and putting the filling into idividual souffle dishes sprinkling with cinnamon then baking. A little swwet for my tastes, but my husband love it!

Antipasto Pasta Salad

This was amazing! I made it for a barbeque a day ahead of time and kept in the fridge overnight. About an hour before we ate I took it out and left on the counter so all of the oil and juices would loosen up a bit. I used rotini pasta instead of seashells. The asiago is key! Everyone was asking what kind of cheese I used and everyone was standing in line to take home some leftovers!

Chicken Puffs

These were pretty good. We halved the recipe which made 2 for each of us using 1 can of crescent rolls. I used onion and chive cream cheese as well. Since we were serving as an entree, I added a lot more filling to each rectangle. I'd say it was at least 1/3 cup for each. I folded the corners of the rectangles over the filling making sure to press together any openings in the dough and then flipped them over and baked. Served with steamed green beans.

Real Italian Calzones

Wow, wow, wow. These were sooo good. I halfed the recipe because my husband and I were the only ones eating them. I like a little extra ricotta cheese, so I put just a little more. The chunked up pepperoni was a great change to sliced. They baked up golsen brown and the perfect size. The next day I gave my sister the recipe, which she tried and said that the next time she wants to impress a guy with dinner she's making these! Easy to customize with your favorite veggies and cheeses.

Hawaiian Chicken Kabobs

I liked the flavor of the marinade. I wish I would have had more of it for the rice as others suggested. We added onions to the skewes which was really good. I would have added green pepper, too if I had had it. I cooked them in the oven because we are out of propane for the grill, but I think I would have liked the flavor and crispiness a grill would have added.

Cheese Herb Bread

Flopped in my bread machine for some reason. Only had ground marjoram and ground thyme so they made the bread a greenish color. Too chewy for me and I couldn't taste the cheese at all.

Fabulous Wet Burritos

I made these for dinner last night. I followed the recipe for the most part, but had to change a few things due to what I had available. I used 10 inch tortillas instead of 12. I also didn't put any lettuce in them. I used one tomato and 4 green onions. I put all of the burritos in a glass baking dish and topped them with some of the sauce (not all...it would be way too much), sharp cheddar cheese (because I didn't have the mexican kind), green onions and the little bits of tomato left on my cutting board. We baked them in a 425 degree oven for about 15 minutes. They were yummy with a side of sour cream and the extra sauce if you really like alot. I think next time I will add shredded lettuce on the side, too. For me the sauce tasted a little too much like canned chili, so next time I might cut down or eliminate it all together. I was also a little hesitant about the beans because my husband and I are not big refried beans fans, but the flavor was not overwhelming and the textures of everything blended well. 5 stars!

White Bread I

Baked it last night. Everything looked good when I checked it halfway, but when the timer went off I discoved that the top of my loaf had totally collapsed. Used bread flour...maybe that's why. Good flavor though. Chewy and yummy.
