Extreme Banana Nut Bread 'EBNB'

Reviewed: Aug. 11, 2006
Best banana bread I've ever made & I've made many! I halved this recipe which worked fine, & instead of using all white sugar, I split it into white & brown. I also buttered & sugared the bread pan and added honey & additional sugar to the top when it was done baking for a sweet bonus. This is such a moist & buttery bread..almost like a dessert!

Easy Cinnamon Fudge

Reviewed: Aug. 12, 2006
Very basic fudge. Not very robust. I omitted the nuts; it probably would have been better with them to give the recipe some personality. There are more interesting & delicious fudges out there. Still, it's easy & it's chocolate, so how can you go wrong?!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Aug. 20, 2006
Great recipe. I forgot to buy kiwi's so used 1 1/2 cups grapes instead - worked beautifully. I chopped all fruit very small w/ pampered chef chopper (smaller than shown in pics for this recipe); this made for an easily dippable salsa. I chose black raspberry perserves = delicious. Big hit at dinner party but recommend making extra chips.

Key Lime Pie I

Reviewed: Aug. 29, 2006
A fine recipe, just not my preference... It was fluffy rather than creamy; not as dense and satisfying as I would haved liked, although it had good flavor. I enjoy "liminess," so I added a few drops of lime juice to the whipping cream and garnished w/ lime wedges. It is quite yellow, so if I were to make again I would add a drop or two of green food coloring to enhance the lime illusion!

Applesauce Raisin Cookies II

Reviewed: Aug. 30, 2006
I hate leaving low stars but this recipe leaves one wanting. The potential for a delicious cookie is there, given the ingredients, but the result misses the boat. The cookies turned out surprisingly bland; the spices definitely need to be upped, or perhaps an addition of finely diced apples or ginger would give a kick. Also, the texture is a bit too spongy for my liking. This recipe pales in comparison to other autumn spice cookies and is not a keeper.

Sopapillas

Reviewed: Sep. 25, 2006
These were tasty...like elephant ears. If you cut the rolled dough into triangles as instructed they turn out quite small and makes the process more time-consuming, so I sliced them in half instead. Also these need to be eaten right away. I made them for a party and made the mistake of storing them in an air-tight container. By the time they were served they had flattened and lost their crispiness. They initially had bubbled up nicely (make sure your oil is very hot.) But the samples my husband got right out of the pan were a hit! I'll make again when I have the time.

Chicken Tortilla Soup V

Reviewed: Sep. 28, 2006
Very good and FAST! I didn't have any salsa so I used a 32 oz can of chopped tomatoes which worked great with the 1 whole chopped green pepper I added. Black beans would be a tasty addition to this soup also. Will make again.

Health Nut Blueberry Muffins

Reviewed: Oct. 11, 2006
The picture doesn't do these muffins justice - mine turned out more like bakery muffins. I increased the wheat flour to 1 cup and the quick oats to 3/4 cup in place of the germ and oatbran. I also replaced half the milk w/ light sour cream. I used large, frozen wild blueberries and didn't have a problem w/ the muffins turning green, which one reviewer mentioned. My husband was eating these for every meal until they were gone and I am now sworn to make them again! SO GOOD. * I made them again... This time I omitted the nuts and added one apple, finely chopped. Turned out great!

Colombian Chicken

Reviewed: Oct. 13, 2006
I probably changed the heart of the recipe by doing this, but I omitted the olives because I didn't have any on hand! Still, I'd never cooked chicken in orange juice with peppers before and it was very good! Made for a sweet, soft chic. Will make the right way next time!

Easiest Peanut Butter Fudge

Reviewed: Oct. 16, 2006
Very good, very simple. Found was best to stir in powdered sugar with a wooden spoon; it took about 5 good minutes of stirring before all the little morsels were smoothed together. Doesn't take long to set. My family loved! Thanks!

Nutmeg Cake

Reviewed: Oct. 29, 2006
This cake has a great traditional texture..nice and fluffy/heavy, if you know what I mean! The nutmeg flavor is awesome; make sure you like that spice if you're going to make this cake- it's really prominent! I was not impressed with the frosting included with the recipe. I usually don't have any problem making frosting, but this one turned out greasy yet difficult to spread at the same time. I'll definitely make the cake again, perhaps with a cinnamon or cream cheese frosting!

Cheesy Chicken Pot Pie

Reviewed: Oct. 29, 2006
My husband who couldn't care less about pot pie usually, LOVES THIS RECIPE. The flavor is so good I was even able to sneak in the peas w/o him realizing. Perfect recipe, nice thick stuffing - a keeper.

Banana Cake I

Reviewed: Nov. 4, 2006
I used this recipe to build a sculpted birthday cake (shape of a monkey.) The recipe was nice and sturdy and shaved off well. So if you're into that sort of creative thing, this is a great recipe! And tastes delicious to boot!

Chicken and Artichokes

Reviewed: Nov. 8, 2006
I made some alterations to this recipe. We typically don't keep alcohol around so I replaced the sherry with buttermilk in the mushroom saute, to which I also added onions. I kept the chicken as whole breasts instead of cutting into bitesize pieces (the servings were prettier) and it was kept very moist. My changes worked well but I probably will try a different artichoke chic recipe next time. Something was just missing in this one...

Pecan Pumpkin Pie I

Reviewed: Dec. 3, 2006
The pie cooked nice and evenly. It's a good recipe but next time I think I'll carmelize the pecans so the top is sweeter...

Sour Cream Apple Pie I

Reviewed: Dec. 3, 2006
I don't usually go for open-topped pies but this one is great! You don't taste the sour cream at all in of itself - it just has a nice overall flavor. Definitely sweet enough which I had originally wondered about...

Cream Cheese Pie

Reviewed: Dec. 3, 2006
I brought this to Thanksgiving dinner and my family gobbled it up. It is so deliciously creamy! Make sure not to overcook - it finishes baking a little after taking it out of the oven. A keeper.

Pickle Rolls

This lacked flavor and was difficult to cut - the pickle wanted to pop out. Definitely needs added garlic or something....

Amazingly Good Eggnog

Reviewed: Dec. 12, 2006
The flavor was good but the consistancy was too thin. For those of us who are used to the creamy store-bought variety of eggnog, I definitely recommend using heavy cream instead of light. It's worth making again with the alteration...thanks for there recipe.
