Wazzu Tailgate Chili

Only changes were using lean ground turkey & turkey sausage, & chopped fresh tomatoes rather than canned. Very good; perfect amount of heat. As is tradition in our family, I served the chili on top of macaroni noodles, then topped w/ the cheese.

Quiche Lorraine I

Because I baked mine in a deep 9-in pie dish, I added 3 eggs. I have to echo others' suggestions of cutting the cream back by half a cup, and adding 1/2 c of cheese. I sauteed the onion (& 3 cloves of garlic) in the bacon grease. It took an extra 12 min to bake, likely b/c of my large dish. Very tasty and great texture.

Zucchini Patties

The flavor is great, but the "batter" is quite thin when following this recipe as-is. In fact, I added bread crumbs to the recipe & it was STILL too thin. The trick is probably in salting & draining the grated zucchini before use. I found also that refrigerating the batter & dropping fairly small amounts of batter into the pan helped them cook through & be more manageable. Again, very tasty; served with tzatziki sauce.

Spicy Baked Sweet Potato Fries

The 425 oven setting was too high -- 375 is hot enough, especially if your fries are on the thin side. Used paprika, garlic powder, cinnamon, s & p to flavor. Served with a nutmeg dip. GREAT!~

Homemade Black Bean Veggie Burgers

EXCELLENT flavor with substitutes of red onion and red pepper. Other change was quick oats rather than bread crumbs. Rated 4 rather than 5 stars b/c unless you do freeze these prior to cooking, they are ridiculously sticky & unmanageable w/o added dry agent. But, very much worth making!!!

Butter Brickle Frozen Delight

MARVELOUS and a huge hit. You have to use your food processor a couple of times but for such a different and tasty dessert, this is really quite fast... and it comes out looking like something from a bakery. Perfect for summertime gatherings. Make the day before to ensure enough freeze time.

Key Lime Cake III

Just needs more lime flavor & I'd review higher. Boxed cake is boxed cake though so don't hold your expectations too high. The frosting was TERRIFIC as you can lime it up to your liking w/ the juice.

Italian Bread Bowls

I recommend making 6 loaves rather than 8. Flatten the balls a bit before baking so that the results are more bowl-like than ball-like. I appreciate that these are hardy so they will hold up to moist soup, but don't expect them to be as soft as classic Italian bread. Overall, yummy and fun - I will make again.

Rhubarb Strawberry Crunch

I made this as a way to use up home grown rhubarb. It was wonderful -- just needed to be spiced up a bit so I added cinnamon and nutmeg to the topping. Would have contributed pecans as well but didn't have any on hand. I cut the sugar by a third and it was plenty sweet. A pleasing dish!

Spinach Arancini

Rather than fry such a lovely side dish, I baked these at 350 degrees for 30 minutes. Worked beautifully. These are quite time-consuming, and would work well to prepare the "balls" ahead of time, then bake when ready -- would be GREAT at for a dinner party. One time-saver: I stuck the rice mixture in the freezer for 10 minutes rather than chilling it overnight.

Rhubarb and Strawberry Pie

I followed the recommendations of allowing the rhubarb to sit in the flour mixture (of which I discarded the extra flour) for a full 30 minutes. I also allowed the pie to stay in the oven after baking was done, while the oven cooled. The pie filling was delicious and a perfect consistency! I sprinkled top layer with sugar and nutmeg prior to baking.

The Old Boy's Strawberry Pie

5 Stars with the modifications I took from various reviews, including: discarding excess cornstarch mixture to prevent a "gluey" pie, using an oatmeal/brown sugar/cinnamon/nutmeg/flour/butter topping, and eliminating the addition of extra sugar during the last 10 min of baking. I also found that I needed to cover the entire pie, not just the crust, with foil during the last 15 min of baking to prevent the crumb topping from getting too dark. It was DELICIOUS. I used "Ruth's Grandma's Pie Crust" from this site -- that one's a staple.... and this is too!
