MMMMM... Brownies

5 stars for being easy, and can't complain about the taste. Although they're delicious, they might not be THE very best brownies ever... I'd be pretty picky about that title! I did temper the eggs before combining. I appreciate that in this recipe the salt flavor isn't lost**

Al Kabsa - Traditional Saudi Rice and Chicken

I was happy to find a new Eastern recipe without curry! This dish has amazing flavor, and smells delicious while simmering. To avoid msg, I cooked the rice in chicken broth rather than using a bouillon cube/water. I ended up adding additional broth to the pot of chicken, so the mixture would end up saucier. (I enjoy the succulence that adds served over rice!) I will definitely make this again, but next time won't waste my pricey saffron in it - there are so many other spices going on, it's just not necessary, and is completely overpowered. Another thing that didn't make a lot of sense was making & adding the Kabsa spice mix separately; pouring each spice directly into the chicken pot individually, as with the nutmeg, etc. would work just as well.

Conh Chowdah (Corn Chowder)

Risking being one of "those people" who rates a recipe that she has modified, this soup did turn out well.... with necessary additions to make it worth eating! I agree with all the reviewers that say this recipe is *blah* as-is, with too much cream. I cut that back by half and replaced with a combo of chicken broth and milk. I also added diced red potatoes, a freshly minced green chili, & green onions instead of 'standard.' That's all it needed to be turned into a complex, inviting, filling meal. Best part: my kids REALLY liked it, and my husband said it tasted like "liquid butter."

Chocolate Chip Pumpkin Bread

This recipe made 92 mini muffins, which baked in 12 minutes at 350. I used applesauce in place of the oil and reduced the sugar by half a cup. These disappeared at my house - the kids RAVED about them. I'll have to keep them handy!!

Boardwalk Quality Maple Walnut Fudge

This is pretty good for being such an easy recipe - it doesn't get much simpler to make fudge. However, it doesn't compare to the "Maple Walnut Fudge" recipe on this site, which calls for a stovetop rolling boil technique and adds marshmallows. That's the recipe I'd probably return to~

Homemade Crescent Rolls

I think we're brainwashed into thinking convenience foods are the norm for flavor. These are BETTER than the refrigerated rolls b/c they're not full of preservatives & additives, plus in my opinion they taste better!! They do have more of a roll consistency than that of a croissant, which is maybe why some ppl were disappointed. But, they are light, fluffy and very yummy. I made sure to let my yeast proof 10 minutes & kneaded the dough another 10 (that is, I let my kitchenaid knead it!) I did have to add about another 1/2 c of flour to get it to the "pulling away from the sides of the bowl" stage. No need to let the dough chill overnight; I rolled it out after 4 hrs. Will absolutely make it again - everyone loved them!

Pan Fried Eggplant with Saffron Mayonnaise

I followed the recipe exactly, but decided for time's sake not to roll up the eggplant strips after frying. I just served them as wedges with the saffron mayo. When slicing my eggplant, I first skinned two sides with my knife, so the slices I cut first from each of those ends would not be all skin on one side. One other tip: once oil is hot, fry at medium temperature. The eggplant in the olive oil seems to burn easily. 5 stars b/c my husband loved these and said the texture and breading were spot on (I however, don't care for eggplant in any capacity!)

Swanson® Roasted Tomato and Barley Soup

Don't let the short list of ingredients fool you: this soup is so satisfyingly delicious! I used fresh tomatoes and roasting those veggies prior to adding to the soup adds a whole other dimension of flavor. I used organic veggie broth rather than chicken. A change to the recipe indications: I did not add the roasted veggies until right before serving, as I didn't want them to lose that baked flavor & texture while sitting in the soup. Also, if you use quick barley, this soup only needs to simmer for 10 minutes before it's ready.

Danish Spiced Rye Bread (Sigtebrod)

Wonderful alongside vegetable soup. Moist, sturdy, & rises well. After beginning to mix, I realized I did not have caraway OR anise, but the bread still turned out VERY flavorful with the other spices. My two loaves were ready at about 30 minutes.

Cherry Dump Pudding

Just in case you're like me & hadn't heard of "dump pudding," it's basically a cobbler. :) Obviously lots of people love this recipe & were able to finesse it to turn out successfully, but I was underwhelmed, especially with how long it took to pit those cherries! I love the flavor of the fresh cherries right on top & that portion of the dish deserves more than 3 stars. However, my cake turned out unevenly baked, & overall it was dry. In order for me to enjoy eating it, it had to be served with vanilla ice cream or whipped cream to add moisture. I think this problem can be repaired by baking longer at a lower oven temp (350?). Also, the cake's flavor isn't decadent, but perhaps that's my fault: I only added about 1 c of juice b/c prior to baking, the pudding looked so full & gooey already, I was afraid of adding too much & it not cooking. More juice would have really helped but I still feel it needs a stronger butter flavor. **One tip: be sure to put your dish on a cookie sheet to keep your oven clean! As far as making this recipe again, I would use the method of the raw cherries alone on top, but with a different cake recipe underneath.

Best Ever Blueberry Cobbler

It's okay, not the "best ever," but maybe that's just my preference for a more sweet-biscuity topping rather than the cake-like result this recipe yields. I did add a layer of a pecan/cinnamon crumble on top of the berries, as suggested, and I think that helped. My family really loved this. Again, it's just not for me.

Spinach Chicken Parmesan

5 stars with my alterations, which were inspired by previous reviews. I added 1/2c sour cream to the sauce, another 1/4 c of milk, and used an entire bag of fresh spinach. Also, the sauce would be really bland without seasoning. I added minched garlic, salt, pepper and a dash of red pepper. The sauce turned out creamy and decadent.
