Special Buttercream Frosting

I used 1 c butter, 1 c shortening to keep a solid consistancy w/o that gross shortening flavor. Firms up nicely; is forgiving and smoothable.

Caribbean Grilled Chicken Breast with Pineapple Salsa

The only change I made to the salsa was using sweet vidalia onions rather than red, to suit my taste. Turned out great! Thanks, this is a simple and delicious topping for chicken.

Blueberry Lemon Bread

I was able to save on fat/sugar by doubling all ingredients except for eggs, of which I used only 3 total and sugar, of which I used 1 1/2 cups total, and making 2 loaves. I also omitted the glaze. It turned out both moist and sweet even with the cutbacks. I'd recommend to those having trouble with sinking blueberries to beat a longer time after the addition of each egg - it fluffs up the batter more and hold the berries in place.

Upside Down Cookies

These taste good, like very cakey cinnamon rolls, but they aren't worth the effort --- too time-consuming for a result of only 12 cookies. I'd rather just make real cinnamon rolls.

Grandma's Gingersnap Cookies

Mine turned out like traditional ginger snaps - thin and crisp (not TOO crisp) rather than the big, soft results some other people got. The flavor is very deep, rich, lovely.

Magic Peanut Butter Middles

Very rich! A previous post said they had trouble they attributed to using natural peanut butter. I use natural p.b. and had absolutely no problem; I recommend refrigerating the p.b. before using to firm it up. Thanks for the recipe!

Fruit Pizza with White Chocolate

Nothing wrong w/ this recipe; my personal taste though thinks the white choc chips (couldn't find vanilla) overpowers the taste of the fruit and crust more than compliments it. I prefer the lighter cream cheese frostings for fruit pizza. NOTE: If you make this on a round pizza pan make sure to leave room for spreading - 1 inch at least.

Cook at last moment when preparing dinner so you can get them right to the table when they're ready; they cool quickly and when that happens the texture fails. Great dish, though!

Curried Chicken Turnovers

Happy accident occured for me w/ this recipe... By the time I'd prepared the pie crust I realized I didn't have any cooked chicken on hand afterall. In place of the missing meat I added diced cucumbers, dried cherries and yellow raisins. I'd recommend this vegetarian variation! It was filling and deLICious! My 1 1/2 yr old gobbled it up!

Real Italian Calzones

I'll echo other reviewers in esteeming this dough recipe - it cooks to perfection - & that you can fill to your liking. My filling consisted of 1 cooked/cubed chic breast, oregano, cheddar & mozz cheeses, salt, pepper, garlic powder and I went ahead & put sauce on the INSIDE - sorry! The recipe made what I consider 4 large, very stuffed calzones. I guess I overstuffed but they turned out delicious and didn't overflow. Thanks for this idea!
