Mexican Turkey Burgers

Reviewed: Aug. 24, 2007
I put these on toasted sourdough because I had no tortillas on hand. Less mexican, but very good!

French Fruitcake

Reviewed: Aug. 24, 2007
Very tasty. It has a different texture than a quick bread - thicker and a little coarse. Doesn't really need a topping but might be especially good w/ homemade orange butter. I replaced RUM with more honey and cream. Will make again.

Light and fresh and oh so easy sidedish. Great use of summer tomatoes. I sprinkled with lowfat feta cheese.

Lana's Sweet and Sour Meatballs

For those of you who don't eat red meat or are watching your diet, use ground turkey!! It works splendidly. My husband requested I put this in the recipe box.

Good Old Fashioned Pancakes

Reviewed: Aug. 11, 2007
No need to add butter on the finished product - they are buttery enough already. They rise & brown SO beautifully.

Blackened Chicken Pizza with Yellow Tomato Salsa

Reviewed: Aug. 10, 2007
Very good but a little too spicy for me. I used provolone rather than pepper jack and will still reduce jalapenos next time. I used a whole wheat pizza crust. This recipe is a healthy way to eat pizza - thanks!

Vegetarian Quiche

Reviewed: Aug. 6, 2007
Very good. Spices can be upped. FYI, my quiche did not appear to be done even after an extra 5 min, as the knife didn't come out clean, but I took it out of the oven anyway & discovered when serving it was indeed done; the quiche just still appears wet when complete. Had I not gone ahead and taken it out I would have overcooked it.

Peanut Butter Pie I

Reviewed: Aug. 3, 2007
The crust definitely needs to be doubled, or plus a half may be enough. I followed others' advice and added an extra 1/2 c of whipping cream & a touch more vanilla. This is very rich and tasty. Needs to go in freezer a couple hours before serving.

Rainbow Salad

Reviewed: Aug. 2, 2007
HINTS: I found it easiest to mix 1 pkg of gelatin w/ water at a time; aside from preventing the mix from setting as other reviews mentioned, this way you only dirty 1 bowl. It takes about 40 MINUTES for each layer to completely set, so there's plenty of time for the next mix to cool down but no need to get all the flavors ready at once. Make sure a layer has completely set before adding another; even if it seems pretty solid the force of pouring another layer on top can disrupt the previous layer. So also, pour gently, just in case. I made a "frosting" consisting of 2 c whipping cream, 2 t lemon rind & 1/4 c pineapple juice... turned out great!

This is perfect when you have virtually no time, virtually no ingredients and even if you have virtually no cooking skills. It's yummy and satisfying.

Pumpkin Cream Cheese Muffins

Reviewed: Jul. 29, 2007
I had some trouble getting the cream cheese mixture to thicken up; just be aware of this and tweek the mixture when making, maybe add powdered sugar. Otherwise the cream cheese middle gets lost in the pumpkin batter. I subbed hazelnuts for the pecans because it's what I had; turned out nicely.

Royal Icing II

Nice b/c it's a super easy recipe. However, I think it needs just a touch more water. As is, it's a bit too tough to pipe out of the bag.
