SO good & works just fine with light coconut milk. Make sure to simmer the tomatoes and milk with the sugar long enough or else it turns out a bit bitter.

Chicken Biryani

This was great; the cardamom offers a delicious and different flavor. The only change I made is using water rather than broth to cook the rice in; with all the spices it seems unneccessary and wasteful to use broth. I'll definitely make biryani again.

French Fruitcake

Very tasty. It has a different texture than a quick bread - thicker and a little coarse. Doesn't really need a topping but might be especially good w/ homemade orange butter. I replaced RUM with more honey and cream. Will make again.

Blackened Chicken Pizza with Yellow Tomato Salsa

Very good but a little too spicy for me. I used provolone rather than pepper jack and will still reduce jalapenos next time. I used a whole wheat pizza crust. This recipe is a healthy way to eat pizza - thanks!

Vegetarian Quiche

Very good. Spices can be upped. FYI, my quiche did not appear to be done even after an extra 5 min, as the knife didn't come out clean, but I took it out of the oven anyway & discovered when serving it was indeed done; the quiche just still appears wet when complete. Had I not gone ahead and taken it out I would have overcooked it.

Peanut Butter Pie I

The crust definitely needs to be doubled, or plus a half may be enough. I followed others' advice and added an extra 1/2 c of whipping cream & a touch more vanilla. This is very rich and tasty. Needs to go in freezer a couple hours before serving.

Rainbow Salad

HINTS: I found it easiest to mix 1 pkg of gelatin w/ water at a time; aside from preventing the mix from setting as other reviews mentioned, this way you only dirty 1 bowl. It takes about 40 MINUTES for each layer to completely set, so there's plenty of time for the next mix to cool down but no need to get all the flavors ready at once. Make sure a layer has completely set before adding another; even if it seems pretty solid the force of pouring another layer on top can disrupt the previous layer. So also, pour gently, just in case. I made a "frosting" consisting of 2 c whipping cream, 2 t lemon rind & 1/4 c pineapple juice... turned out great!
