Frosted Pumpkin Cookies

The cookies are just okay; quite cakey and a bit bland. I am thrilled about the frosting, though (hence the ***** rating,) and as I have some extra, am going to make butter cookies to use the excess on. I used maple syrup as I had no flavoring. You MUST try this frosting!!!

Delicious and flavorful. I took a short-cut for the sake of time by chopping the onion in the food processor and then cooking, rather than cook then puree. I served with chicken over rice...yum~

Creamy Peanut Butter Fudge

For a fudge that takes the easy way out by using marshmallow cream, I found this recipe pretty difficult to get right. Mine was on the crumbly/dry side, which apparently means I boiled it too long. Fudge can be tricky. The flavor was good though and I'll attempt it again to get the "creamy" experience!

Gingerbread Boys

I love that the dough popped right out of the cookie cutter and I didn't have to reshape deformed cookies on the sheet! The dough holds up great, is very managable and sturdy. I subbed molasses for corn syrup and will next time add an extra Tbsp, as there wasn't quite enough bite for me. Decorated with Royal Icing I.

Savory Mushroom-Barley Soup

I recommend using vegetable broth, homemade if possible. The beef broth doesn't support the veggie goodness of this soup. Needs to be served with a hearty bread.

This is a little spicy; I added a tablespoon of peanut butter to my bowl and that subdued it AND added great flavor. Wonderful, healthy and flavorful soup.

Light Oat Bread

Delicious - my family couldn't get enough. I replaced 3/4 of the flour with whole wheat flour and added 2 T honey for kicks. Works great for sandwiches.. I sent it in my son's lunchbox today.

African Peanut Soup

Very good! I used white rice because my brown rice takes 40 min to cook versus the 20 it took the white, and I didn't have the time to spare. For the amount of soup this recipe makes I recommend doubling the spices. Served with homemade wheat bread.

Empanadas

I used a simple apple pie filling for these & they turned out great. They were much easier than I anticipated. I got 10 small empanadas out of the recipe & served with a small scoop of vanilla ice cream. Yum!

Calypso Black Bean Soup

This is an awesome blend of flavors - don't be afraid of the combination. It's very satisfying and even my kids loved it. I didn't find I needed to puree the soup; it was cooked down pretty well on its own and we liked the small chunks of beans that were left. Thanks, will make again.

Awesome. Can play around with it to make it healthier - you don't really need the cream of chic soup. Use flour to thicken the soup instead if you need to.
