White Barbecue Sauce

Reviewed: Apr. 23, 2008
Following the directions "as-is" yields a very thin sauce. Since I was planning to use this as a topping to turkey meatloaf, I thickened the mixture up on the stove: I dissolved 2 T flour in 1/4 c milk, then slowly whisked into the sauce at a boil. It worked well, really had great flavor, and wasn't overpowering as I feared it might be.

Shortbread Crust

Reviewed: Apr. 15, 2008
This recipe provides more dough than will fit into a 9-in pie plate. It would probably work better in a 9x13. I had to cook 7 minutes longer than indicated to get it done & a couple of times had to take it out of the oven to pat down & reshape the rising dough so it would leave room in the dish for my pie filling. It was worth the effort though & went nicely with my key lime pie.

Key Lime Pie IV

Reviewed: Apr. 15, 2008
3 & and 1/2 stars. After reading reviews I doubled the key lime juice & was glad I did. It's good but SO SWEET. It firms up to a nice creamy, sturdy consistency though, especially if you pop in the freezer for a few minutes BEFORE the fridge. Not quite as good as Key Lime Pie VII but better than Key Lime Pie I.

Best Beef Stroganoff

Reviewed: Apr. 15, 2008
I took some liberties w/ this recipe to make it more healthy. I subbed ground turkey for the beef, msg-free chic broth for the beef consomme, & used light sour cream. I appreciate the base recipe though as this was very good. My husband LOVED it.

I omitted the soup and instead used light sour cream flavored with garlic, parsley, salt and pepper. It was super moist!

Chocolate Peanut Butter Pie V

I'll say three and a half stars. It tastes fine but just isn't that special. Not really worth the calories! I will give it props for being super fast to prepare, though. Good for a quick fix.

Old Fashioned Sugar Cookies II

Reviewed: Mar. 21, 2008
These cookies are WONDERFUL. The dough is so sturdy and easy to handle: pops right out of the cookie cutters. I subbed nutmeg for the mace and the result almost had a flavor reminiscent of eggnog. My cookies were cut small and I baked for SIX minutes - was perfect.

Cheesecake Brownies

Reviewed: Mar. 18, 2008
Disappointing as these were kind of bland. The cream cheese portion does not stand out. There are much tastier ways to use a brownie mix and I won't make this again.

Baked Potato Soup

Reviewed: Mar. 18, 2008
This is so delicious - best potato soup I've ever had. I tripled the recipe but used 9 potatos; I supposed my soup was pretty chunky but we love it like that. I did not increase the broth, however, from it's original indications, and just used water to make up the difference. Tasted great and saved money. Baking the potatoes rather than boiling as with traditional potato soups really adds flavor!

Easy Decadent Truffles

Reviewed: Mar. 16, 2008
Definitely spring for a good chocolate for a truly gourmet result. I used generic chips and got a generic result; nothing to write home about (but it WAS cream cheese and sugar so I couldn't really go too wrong!) These do offer opportunity for creativity and the result is pleasing to the eye: I rolled mine in cocoa powder, powdered sugar, almonds and hazelnuts.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Mar. 11, 2008
The thing I don't like about this recipe is that it's very difficult to make healthy. Typically I would use applesauce rather than fat, all egg whites, and honey or agave rather than sugar. This recipe just doesn't really accommodate those substitutions. But, if you're looking for all the delicious calories, these cookies work tastily. DOES need more spice, though (nutmeg, ginger, double cinnamon.)

German Potato Pancakes

Reviewed: Mar. 11, 2008
I shredded the potatoes in a food processor to speed things up. These cook very evenly; I didn't have problems with the outsides burning while the inside remained mushy, as I have with other potato pancake recipes. Needed extra salt. I served with dollops of sour cream.

Baked Egg Casserole

Very rich! I served for guests and they raved. It's pretty simple and if you pre-boil your eggs the night before, this is quicker than other egg casseroles.
