Peanut Butter Pie VIII

If you're looking for a cream pie that has a powerful p.b. flavor, try Peanut Butter Pie I. This one was a fine pie, though. The cream layer takes about 10 min to thicken on medium heat, another 10 to get the egg whites to the hard peak stage; the recipe is worth the time. The only change I made was to use an Oreo crust at the behest of my husband. :)

Garlic-Lemon Double Stuffed Chicken

I didn't bother with the cream cheese since many reviews said it was over-powering & went with cheddar alone. This chicken didn't need it! It turned out so MOIST, cooked perfectly. The lemon-butter sauce adds terrific flavor. Will absolutely make again.

Green Bean Fries

Following others' advice, I spread these on a cookie sheet and baked at 375 for about 20 minutes, rather than frying. They were nice and crispy; a relatively easy option for green beans that's fun for the kids!

Crunchy Bagel Chips

Rather than brushing the butter over the chips, I put the bagel slices in a large ziploc bag, poured in 1/2 c melted butter and the seasonings, and shook it up like crazy. Then I laid them out on the sheet for baking. I got great coverage with this method. These are fast and addictive -- I served with Spinach/artichoke dip.

Sugar Cream Pie I

This ended up tasting good - like sweet tapioca - but the pie was quite thin, like 1.5 inches high. Perhaps I did something wrong; the recipe doesn't indicate a time to boil, only to do so until thickened, but it thickens quite quickly so I figured it would rise if I kept it boiling for a while. I did so, stirring, for several minutes with no change. So don't bother - it's ready to go in the crust after only 5 minutes or so.

White Barbecue Sauce

Following the directions "as-is" yields a very thin sauce. Since I was planning to use this as a topping to turkey meatloaf, I thickened the mixture up on the stove: I dissolved 2 T flour in 1/4 c milk, then slowly whisked into the sauce at a boil. It worked well, really had great flavor, and wasn't overpowering as I feared it might be.

Shortbread Crust

This recipe provides more dough than will fit into a 9-in pie plate. It would probably work better in a 9x13. I had to cook 7 minutes longer than indicated to get it done & a couple of times had to take it out of the oven to pat down & reshape the rising dough so it would leave room in the dish for my pie filling. It was worth the effort though & went nicely with my key lime pie.

Key Lime Pie IV

3 & and 1/2 stars. After reading reviews I doubled the key lime juice & was glad I did. It's good but SO SWEET. It firms up to a nice creamy, sturdy consistency though, especially if you pop in the freezer for a few minutes BEFORE the fridge. Not quite as good as Key Lime Pie VII but better than Key Lime Pie I.

Best Beef Stroganoff

I took some liberties w/ this recipe to make it more healthy. I subbed ground turkey for the beef, msg-free chic broth for the beef consomme, & used light sour cream. I appreciate the base recipe though as this was very good. My husband LOVED it.
