Lemon Yogurt Pound Cake with Lemon Glaze

I used Greek yogurt + 1 T real lemon juice, as I've never seen a "lemon yogurt" at the store that doesn't have load of processing ingredients. Also used all butter rather than shortening, cut down [raw] sugar to 1 cup. Honey as a sub for the sugar would taste great in this recipe. I knew we'd like it lemony-er than the recipe sets this cake up to be, so I doubled the zest. Glad I did!

Simple White Cake

I recommend increasing milk to 3/4 c. and adding 1/2 t. salt if your butter isn't salted. I make cakes professionally and this recipe is great. Nice and sturdy for stacking, rich flavor for a white.

Apple Crisp Pie

Rolling out the dough was not a necessary step. I just poured the "crumbles" out from the mixing bowl into the pie pan and then pressed it into the bottom and up the sides, like I would a graham cracker crust. Quick and easy.

Peppermint Meringues

Perfect! As always, the keys to meringues are finesse & patience. Added a *tiny* splash of peppermind extract. It tasted NOTHING like toothpaste.

Apple Orchard Punch

Good but would alter next time. I might make it more 'festive' by using apple sparkling cider rather than standard juice. All the juices in this punch really tame down the carbonation from the ginger ale, and it ends up being a fancy... well... juice!

Pretty good. Needs oranges doubled and I don't know what else...something just seems to be missing! Make sure to get a "high quality" mix of fruit, as this dish obviously depends on it.

Creamy Hot Cocoa

DEEEEElicious. Didn't bother with the half-&-half at the end, as the chocolate didn't need further diluting. Made a "cocoa bar" with crushed peppermint, whipped cream, chocolate chips, & cinnamon -- kids had a fun time choosing their toppings for this wonderful cocoa!

Whole Wheat Drop Biscuits

Very good. I replaced the oil with butter - personal preference. The biscuits had to cook for about 6 minutes longer than indicated. Perfect compliment to the barley soup I made.

White Almond Wedding Cake

Moist yet sturdy enough if you're carving your cake. I did find that the almond extract needed to be doubled for its flavor to come through at all. Also, if you don't care about keeping the tint of the cake white, you can cut back to 3 eggs leaving the yolks in.

Cornbread Muffins I

Replaced the milk with cream and used 1/3 c honey rather than the 2/3 c white sugar (in addition to the 1/4 honey the recipe already called for.) They were great. Only took 18 minutes to bake.

Homemade Wonton Soup

Allow yourself plenty of time to make this - rolling the wontons is a slow process. A couple of NOTES: I followed the suggestions to boil the wontons in water separately, then add them to the soup once cooked. This was a good idea, but I let my wontons sit in the colander too long & they stuck together & some tore open - Just a warning. Also, although the recipe doesn't indicate it, I cooked my sausage on the stovetop before filling the wrappers. It didn't seem to me that the filling would have cooked in the 5-minute boil, & I didn't want to risk raw meat. It worked great -- I wonder if pre-cooking the sausage is a step missed in the instructions?? Overall, it's worth the labor as it's a very flavorful soup. Only ingredient change I made was to sub 25% of the broth with beef as that's what I've seen used in Chinese restaurants. The family LOVED it (even little ones) & I'll make it again.

Breakfast Cookies

Don't be afraid of the list of unlikely ingredients! They meld together like magic! Bacon cookies -- who knew?! And these really are cookies, & didn't turn out like biscuits as we thought they might. I made the batter the night before so I could easily pop them in the oven the following morning. The kids LOVED them!

Poppy Seed Mini Muffins

The texture of these muffins was good - fluffy and pretty moist. However, even after doubling the lemon extract, the end result didn't have that fresh, tart lemon flavor I was hoping for. The lemon was really just an undertone. Maybe I'll look for a recipe that calls for fresh lemon juice/zest.
