Burrito Pie

Not sure if I can really add much insight to this dish since over 2,000 people have all ready commented on it. However, my family and I thought it tasted very good. I thought it might be spicier than it was and I worried that my three year old might not eat it, but he ate his whole serving. This was a nice change of pace from having just regular tacos again. Smoked Chile Cole Slaw

This cole slaw was pretty good. I was expecting it to be really spicy, but it wasn't too bad. My husband really liked it and my 3 year old ate a few bites of his. I paired it with a Mexican casserole to stay with a Mexican/Southwest style meal. We will definitely make this again when we get tired of the regular cole slaws. Thank you for this recipe!

Sopapilla Cheesecake Dessert

Now this is what I call a little slice of heaven! So good and rich. And so insanely easy, which is the best part since I don't make very many desserts. I am glad that I found this recipe because it would be a good one to either serve to guests at our house or take if I am asked to bring a dessert somewhere. Everyone that had it tonight loved it and my mom asked for the recipe. The only change I made was I only put almond slices on half of the cheesecake and left the other half without - I wasn't sure if everyone liked almonds that I was going to be serving tonight so thought I would split it evenly. Thank you for this wonderful recipe!

Hot Ham and Cheese Sandwiches

These sandwiches tasted perfect! Simple and easy to make for a quick lunch or dinner. My husband didn't seem too thrilled with these, but I think he was wanting something more elaborate for dinner when he got home from work. Oh well, my three year old and I liked them a lot. I loved the flavor of the horseradish mustard/butter/onion mixture, I think it complemented the ham and Swiss very well. The onion flavor wasn't too overpowering and the horseradish gave the sandwich just enough of a kick to make it not just an ordinary sandwich. Thank you for sharing your recipe, Lois!

Alyson's Broccoli Salad

Great salad! I decided to use a different recipe for my broccoli salad tonight, and we really liked it. I thought the dressing tasted better in this salad than the other one, but I like the other one because it calls for shredded cheddar cheese. Easily fixed though - next time I will just add some cheese and I think it will be perfect! The only thing I changed was that I used turkey bacon instead of regular just because that is the only kind that I eat. That makes it a little healthier I guess. We wil definitely make this one again, thanks for the recipe!

Tuna Egg Sandwich

This recipe was pretty good, although I felt like it was missing something. Next time I might add some sweet relish and see how that turns out. Overall it was good. A good recipe to use if you want a sandwich but can't decide if you want tuna or egg salad - why not go with both! This would be a recipe that I would make myself for lunch to mix things up a bit. Buttery Rolls

I didn't use a bread machine so I just mixed up all of the ingredients, kneaded for about 8 minutes, let rise for 45, divided into rolls, let sit for 15 minutes, and then baked. Turned out great! The dough didn't rise as much as I thought it would so I was a little concerned about how they would turn out, but they tasted fabulous. The rolls ended up rising quite a bit in the oven. These made nice, light, fluffy rolls that would be a perfect compliment to almost any meal. Thanks for the recipe, Debbie!

Debdoozie's Blue Ribbon Chili

Great chili recipe! So simple to make for a weeknight dinner since there isn't much prep work. Followed the recipe exactly as written and it turned out perfect! A little on the spicy side, just to warn people that are sensitive to a lot of spice, but it tastes great. Thanks for sharing this recipe, Deb, my whole family loved it!

Zucchini and Corn Topped with Cheese

I don't think I have ever had a zucchini dish that I haven't liked, I just LOVE it! This recipe is great - easy to prepare and if you cut back on the cheese a little it's pretty healthy. To be honest, I didn't add all of the cheese, we added the amount we wanted after we dished up our individual servings. My three year old also loved it, and had two big helpings! Great recipe, thank you for sharing, Leelee!

Pizza Casserole

I thought this would be a hit with my three year old since pizza is his favorite thing in the world to eat, but for some reason it wasn't. My husband and I thought it was okay, but nothing really memorable. The casserole is very cheesy, which I liked about it. I will probably make this again in a couple of months and see if my son likes it any better. Thanks for the recipe, Melissa!

Bacon Cheddar Chive Muffins

These muffins were pretty good. Maybe a little too garlicky, but overall, had good flavor. My husband really liked them so I know that he will look forward to eating them for a quick breakfast. The only thing I changed was that I used turkey bacon since that I all I ever buy anymore, so at least that made it a little healthier. I will probably make a bigger batch next time so that I can freeze them and we can use them for quick meals. Thank you for sharing this recipe!

Greek Pasta Salad III

Fabulous! Took some time chopping all the veggies, but it was a great recipe. And it makes a lot! There was a nice blend with the olive oil and the vinegar, neither one really overpowered the other. Fun, colorful pasta salad to make for the summer when it's so hot outside. I forgot to add the Feta cheese at first, and only remembered after our first helpings were eaten, however, the second helpings were even better. Looking forward to leftovers of this tomorrow. Thank you for the wonderful recipe!

Breaded Chicken Fingers

I came to the conclusion after I made these chicken fingers that these are not meant to be baked. I'm sure they turn out much better when fried. I didn't mark them down to a four because of the baking though because that wouldn't be fair, but I rated a four because my husband and I thought they were a little bland. Just tasted like breadcrumbs to me. However, my three year old ate them up like a champ so I will probably make these again for him. Make a whole batch of them, stick them in the freezer and pull out a few whenever we're crunched for time, and that will make an easy dinner for him. Much healthier than prepackaged frozen ones! Salsa Chicken Burrito Filling

Yum, yum, yum! This was a very good burrito recipe. Not too spicy, but it had a little bit of a kick to it that we enjoyed. I put all the ingredients in the slow cooker on high for about three hours, then shredded the chicken, and set it on low for one more hour. So easy! And I love that this uses ingredients that I normally already have on hand so there is virtually no planning that has to go into making this. I doubled the recipe so we could have leftovers, which I am glad that I did because it didn't seem to make a whole lot, and no one in my house is that big of an eater. I would say that doubling it makes about six burritos. Thank you for a great recipe that will be made again and again!

Way Easy Pizza Sauce/Bread Stick Dip

So so easy and good! I doubt if I will ever buy pizza sauce again since this took only a couple of minutes to put together and tastes so much better than store bought sauce. It had a good garlic taste to it, but I thought the other spices could be stronger. Next time I might try doubling the oregano and parsley and see how that turns out. Still great though, no complaints, I just like to experiment. I doubled the recipe so I could use part of it for a pizza and the rest as a dipping sauce for breadsticks, and I thought it worked out great for both. Thank you for a nice, really simple sauce, Laguna!

Fancy Potatoes

Delicious! Since I had fairly small potatoes left I ended up using seven instead of five, but I left everything else the same. Tasted great, easy to prepare, and leftovers are wonderful too. Ground Beef Stroganoff

This recipe was all right - nothing exciting and leaning a little towards the bland side. I felt like there was too much mayo/sour cream mixture and not enough spice. The only change that I made to this recipe was to use fresh mushrooms instead of the canned. It was an easy recipe to make on a weeknight so that was one really good thing about it! However, I probably won't make this particular one again since there was a Stroganoff recipe that I tried a few months ago that my family liked much better. Oh, and it makes way more than four servings because there were three adults and one toddler eating this the first night and there were a lot of leftovers. So that at least cuts down on the amount of calories and fat if that concerns anyone wanting to make this. Thank you, Linda, for a quick and easy dinner though.

Country Breakfast Casserole

This breakfast casserole was all right, nothing spectacular though. I had to bake it probably about 15 minutes longer than the stated time to make sure that it was cooked through all the way. I liked the flavor of it, but thought there was too much bread topping if you use all six slices of bread. If I make this again, I will cut down on that. I would probably even add another egg or two to the mixture because I thought that layer was a little thin. But on the plus side, this is the first breakfast casserole that my three year old has willingly eaten! Thank you for sharing this recipe.

I made this salad tonight as our main course - it's over 100 degrees and humid...so yeah, I didn't feel like cooking! The salad was very good and refreshing. I loved that there weren't a whole lot of ingredients so it was very easy and quick to make. I made everything as is except I halved the dressing. Just thought it seemed like an awful lot of dressing for only one head of lettuce, and the half dressing measurement worked out great. Can't wait to try it again, and will most likely use it as a side dish usually, but it was wonderful as a main dish too! Thanks for sharing this recipe with us.

Creamy Corn Salad

We thought this recipe was pretty good overall. When reading over the reviews there were several people that commented on there being too much mayonnaise, so when I made it I just put in 1/4 cup at first. I still thought it got a little runny so I think next time I will probably just add it a spoonful at a time and stop when the corn mixture is just coated. The flavor was great though! I can't believe how good it tasted with so few ingredients. I also liked that it is a simple enough recipe that I can make it for a quick weeknight meal, but still different enough that we're not eating just plain corn. Thank you for sharing this recipe with us, June!
