About this Cook
I'm an English teacher who loves to cook! (But who on here doesn't?) One of my favorite things is when I make something delicious and my friends and family LOVE it.
My favorite things to cook
Anything that tastes good! I think desserts are the most fun to make. Some things I make frequently are Pepper Jack Chicken Pasta, my dad's Kung Pao Chicken, and my mom's Chicken Enchiladas. Those are my husband's favorites!
My favorite family cooking traditions
My family's Christmas feast is a smorgasbord of sorts--we have all sorts of finger foods, several of them Norwegian. On Christmas Eve, all of us kids would help prepare the smorbrod (open-faced sandwiches), ham and cream cheese rolls, and all the other yummy foods. Later, we have riskrem (a type of rice pudding), and sometimes rod grot (a red berry pudding). In the morning, we have vafler (Norwegian waffles) with hot chocolate and sausage. I still love going home for Christmas and getting back into that tradition. It's one of my favorites.
My cooking triumphs
One year in college, my friends and roommates got together to have a delicious Thanksgiving dinner. Somehow I was assigned to cook the turkey. I had never really participated in that part of Thanksgiving cooking at home, so I had no idea what I was doing. Thanks to my parents, who were willing to answer my countless phone calls, the turkey turned out wonderfully! Since then, I've become the turkey master for all of our Thanksgiving and Christmas parties!
My cooking tragedies
The one thing I really have trouble cooking is yeast breads. I try and try, but it seems like I always either make hard-tack or goo! Quick breads are a cinch, but once yeast enters the picture, all hell breaks loose!

Southwestern Turkey Soup
Absolutely delicious! I made a couple of changes, but I'm sure the recipe great without them. Here's what I did: 1) used 1 can petite diced tomatoes & pureed half of it; 2) used 1/2 a yellow onion and 1/2 a red onion; 3) used 2 tsp. fresh chopped cilantro instead of 1/2 tsp dried; 4) added 1 can rinsed & drained black beans; and 5) used about 2 cups shredded chicken (didn't have turkey). It made about twelve 1.5 cup servings. And the best part, on top of it being delicious, is that it only has about 210 calories per serving, including the cheese! I will be making this one again for sure.
