Pumpkin Torte II

This recipe was very easy to follow. I did however change a little bit as I can not have regular sugar. What I did was in place of the sugar I use Agave Nectar so the portion was for 3/4 cup of sugar I used 7TBSP +1 1/2 tsp of agave because of the liquid I reduced the milk down to 3 oz. Like another I used cool whip in place of the egg whites. I also only used the microwave to heat up the pumpkin mixture since I didn't have to melt the sugar but wanted to cook the egg yolk some. I use the Agave as it has a very low glycemic index level and it good for diabetics. It also has a very long shelf life as it doesn't crystallize. My family loves it a lot it will be one recipe that I will use a lot

Pilgrim Pumpkin Pie

My great grandmother, who left us at the age of 101 in 1980, use to make this pie but she didn't call it pilgrim pie. The crust is awesome. I rolled it out between two sheets of wax paper and forgot to flour it so I had to do it again and it was just as flaky as the apple pie I made with the crust. I altered the pumpkin recipe as I added 12oz of vanilla spiced old southern comfort egg nog instead of the milk and I used agave nectar in place of the honey as there are a few people who are diabetics and this has a low glyscemic index for them. I also used it in the dough. None of my family could tell that I didn't use any sugar or honey in the recipe and they loved it. It turned out to be a very creamy pie I also use the pie filling and made a custard for those who don't like crust with their pies. It also turned out very good.

Slow Cooker Cranberry Sauce

This is an awesome recipe. To the lady who was having problems with the Agava When I use it I reduce all my liquids by 1% for the brown sugar I use the amber and use the light for white sugar it does work hope this helps

Kat's Cauliflower Leek Soup

I followed the recipe until I got to the end and then I had saved about 1 cup of the mixture till I pureed the rest then I added it to the final mix as I prefer to have some of the vegetables in the soup. Was very good loved the combination of the cauliflower and potatoes compared to just potatoes. will make this again especially in the winter. I might next make it with sweet potatoes.

Egg in a Hole

This was called Eggs in the Basket for me when I was growing up. I am 70 years young and it is still a great easy breakfast/brunch type of meal. I generally use butter on both sides and toast the one before putting in the egg as this helps so the white doesn't make it too soggy. It isn't toasted all the way just enough to put a light crust on it do the other side the same then add the egg it seems to help. In serving it I put the lid (already toasted also) back on the egg and serve it with bananas in orange juice. My kids loved this for a special meal.
