Texas Caviar with Avocado

This was excellent; quickly wiped out at work, and the recipe was requested by many. I made a few changes- I substituted one can of black beans for one of the black eyed peas, used one can of Ro-Tel and one can of chili-ready tomatoes in place of fresh because I can't find good winter tomatoes here, and added cumin. Other than that I stuck to the recipe, and even 6 days later it's still quite tasty. I made up a burrito with leftovers, and even my EXTREMELY picky 15 month old keeps coming up to me with mouth open for more. Here's how I did it: I took a tortilla, and tore up a slice of cheese and placed 1/4 of it in small pieces down one edge of the tortilla, with the rest near the middle. Microwave 15 seconds to soften. Take 2 T. of the caviar and use a slotted spoon to drain the extra liquid off, and put down the middle of the tortilla. Microwave 30 seconds, add a bit of sour cream, and roll up burrito-style, using the cheese along the edge to seal at the end. YUM!

Sloppy Joes II

These were FANTASTIC ~ much better than a pre-made mix. Cheap and easy, too. I leave out the green pepper, and it was really good wrapped up with cheese in a tortilla and then warmed the next day. Thanks for sharing!

Calabacitas Con Queso - Zucchini with Cheese

This was fantastic! I didn't have everything on hand, so I had to substitute and used frozen corn for the canned, drained canned diced tomatoes for the fresh, and about 1/2 pound of shreeded Montery jack, and 1/4 pound shredded Mexican mixture (cheddar/M. jack/queso/asedero). I also added a dash of Adobo seasoning and some roasted garlic. Due to my entree taking longer than I thought, I cooked the vegetables as directed, then mixed in the cheese and finished it like a casserole in the oven. This dish will be put into regular rotation. It may be fattening with all that cheese, but the taste is well worth it! Thanks for sharing. :)

Chocolate Banana Bread

Heaven, pure and simple. Very rich and cake-like. I made mini-loaves and gave them to neighbors as New Years gifts, and they were perfect. Thanks so much for the recipe!

Pork with Peaches Stir-Fry

I followed the recipe exactly, and neither my husband or I liked it in the least bit. The peaches gave it a really kinky flavor and a bad aftertaste. I was disappointed after the great reviews.....it sounded good, but just didn't fly for us.

Pork Tenderloin

Excellent dish. I did sear the tenderloin on all sides before baking, which I do anytime I cook this cut of meat. This will go into my regular rotation. I served it with Orzo with Mushrooms and Walnuts from this site, and it was fantastic.

California Chicken Stir Fry

Easy and fabulous! I doubled the sauce, used a larger can of pineapple, thickened it a bit with cornstarch, and used fresh vegetables. This will be served frequently at our house. Excellent over chow mein noodles.

Open-Faced Broiled Roast Beef Sandwich

This sandwich was outstanding, and very easy to make. The only thing I did differently was to add a bit of olive oil and vinegar on top of the tomato, and to put the onions on top of the cheese-- the broiler carmelizes them. This, and variations of it, will become a part of our regular rotation on those "I don't feel like cooking" nights. Thanks for sharing!

BBQ Pork for Sandwiches

One of the easiest and best recipes in my collection, and so delicious that I will search no more for a bbq pork recipe. It's very versatile and can be adapted to your personal taste just by the sauce you choose to use. I was pressed for time, so I cooked/shredded it one night, and baked it with the sauce the next. Thanks for sharing what will become a standard dish in our house!

Great Hot Crab Dip

Excellent! Gourmet taste with simple prep. I used 1 1/2 cans of crabmeat, since fresh is difficult and expensive to come by here in southwest Missouri. Thanks for sharing-- this will become standard appetizer fare in our house.

Chicken Enchiladas V

This is an absolutely fabulous recipe. I decreased the sour cream to one cup, added a bit of cumin seasoning, and increased the cheese to 2 cups. I also pour cream or half & half over the top before adding the cheese. Leftovers are as good as the first day!

Outstanding Chicken Dinner

This was delicious; it's an excellent dish to serve at a dinner party. It's elegant, but not really that hard to make. I will say that the amount of flour called for is WAY too much....I made it as the recipe directed, and it was not a sauce--it was paste. So I tossed out half of it, and then added more half & half and some milk when I ran out of that. I think 3-4 Tbsp. would have been pleny, and you could decrease the butter. Also needs plenty of salt and pepper. Other than that, spectacular!

B.L.T. Salad with Basil Mayo Dressing

Delicious! The croutons take quite awhile to brown, but are well worth the wait....they make the salad. Try cubing the bread with a pizza cutter to speed up preparation. Thanks for sharing. :)
