My favorite things to cook
I really don't have any favorite food items. We both love Italian and Mexican... My husband is Italian so he loves to make Canolis.. I do make a pretty good bean and cheese burrito mix.
My favorite family cooking traditions
My grandmother's family (on my mother's side) originated from Norway. I love Christmas because they make all kinds of great cookies... Thanksgiving is always great at my parents house because they have a big kitchen where everyone helps out with dinner.

Fajita Marinade III
We had a packet of fajita seasoning but I wanted to try something new. Found this recipe with the majority of reviews showing it was good. Should have listened to the ones who were negative instead. We ended up adding the seasoning into the marinade while we were cooking because it was just so bland. Sorry - white cider vinegar couldn't even save this.

Corn Noodle Casserole
When I read the recipe I could see why others thought it was bland. I decided to use Tony Chachere's Creole seasoning and it was AWESOME. I highly recommend it. I added 2 stalks of diced celery, 3 cloves of fresh minced garlic and roughly 12 oz of frozen shoepeg corn. I didn't have any onion on hand so I used some dried minced onion as well. We definitely did not use all of the pasta that had been recommended (maybe 12 oz). We also chose penne instead of egg noodles. Much more hearty... We used 1 can of cream of celery and a 1/2 can of cream of mushroom and added 1/3 cup of milk. Next time we thought we'd try using some green chiles or mexicorn mix. Hope this helps spice up the recipe for others!

Mandarin Orange Chicken
Family liked it. Used 1 cup OJ as some reviewers stated. Made it very orangy. Might lower to 3/4 cup next time. Let it reduce down to a nice sauce that covered the chicken. Didn't have any cashews or green onions but it still worked out. Next time I'm definitely adding onions and bell peppers because I felt it was missing something.
