Enchilada Sauce

Great enchilada sauce, very tasty and authentic. Note to others that may want a more traditional enchilada sauce: when you add the broth, add an equal portion of tomato paste. While cooking, you can add more broth or water to thin it out if necessary.

Shredded Beef Enchiladas

This recipe is fantastic! The shredded beef adds authenticity and great texture; way better than the standard ground beef recipes I've seen. I dumped a some canned enchilada sauce on top before adding the shredded cheese. AMAZING! thanks for the great recipe. UPDATE: With the sauce recipe on this page: http://allrecipes.com/Recipe/Enchilada-Sauce-2/Detail.aspx this enchilada recipe can't be beat. hands down best enchiladas you've ever had. :)

Spiced Banana Bread

This banana bread was great! The spices add a nice flavor, different from the standard b-bread. I put the batter in one pan and baked for a little longer. I also added 1 cup of walnuts to the mix. Tasty!

Chicken Parmigiana

Great base recipe! I like to pound the chicken first. Don't skimp on the egg - olive oil and the like just doesn't grab enough of the crumbs. Crushed crackers are a nice sub for bread crumbs, and add fresh garlic, pepper, and italian seasoning to the mix. to make it extra crispy, bake on a pan that has slits in it, flip the chicken when it's close to being done and turn oven to broil. Add cheese for the last couple minutes til melted. Then, put sauce on the chicken when it's already on the plate, no need to soak it in sauce while cooking - makes it soggy. Enjoy!

SO tasty! I use a slow-cooker on low for about 8 hours, mm-mmm good :) UPDATE: this recipe works great with just about any meat. Beef, Pork, Chicken. Heat tortillas in a pan, and serve with fresh guacamole & salsa. ole'

Slow Cooker Beef Stroganoff I

Wow, delicious! this dish has become a staple at my house. I add a clove of minced garlic with the meat, and use half sour cream/ half cream cheese at the end. Serve over a half bag of cooked egg noodles (if you double the recipe, use a full bag!)

T-Bones with Onions

Great recipe! The onions are a nice touch of flavor, especially since I don't like to marinate T-bone steak, simple salt & pepper does it, with these tasty onions to top it off! However, I disagree on the temp - those are too high. T-bone should never be welldone - if you prefer welldone steak, you'd be better off with a ribeye or similar cut of beef. For medium rare take it off the grill at 140 and let sit covered for 5-10 minutes so the juices can settle. The steak will continue to raise in temperature about 5 degrees while sitting.
