Ham and Chicken Casserole

Reviewed: Oct. 3, 2008
This recipe should be considered as a good idea for a casserole & needs a lot of tweaking to be flavorful. Quadruple the portion, saute onion, garlic and celery in butter to start the sauce, add more cheese. Use your imagination, but the recipe as is is very bland.

Roasted Pears with Caramel Sauce

Reviewed: Nov. 15, 2007
This is simply not good. I just ruined my pears by doing this to them. In the future, I think I would use a soft pear and just saute' with butter, brown sugar & cinnamon in a sauce pan, then top w/ whipped cream.

Butternut Squash Bisque

Delicious. Add a little minced garlic and don't skimp on the cream as it really makes this soup.

Garlicky Baked Butternut Squash

Reviewed: Nov. 2, 2007
I love this recipe, but prefer to saute the sqush rather than bake. Sage is wonderful with butternut squash and I highly recommended adding some for great variation. Serve over seasoned penne pasta for a very filling meal.

Butternut Squash with Onions and Pecans

Reviewed: Nov. 2, 2007
Very good. Use a sturdy vegetable peeler then slice and cube. Is best w/ butter but I reduced by a TBSP. When cooking butternut squash, be generous w/ the salt and pepper. I added garlic and at others suggestions, coriander, ginger, & parmesan. Is beautiful served over rice & paired w/ a green veggie.

Green Grog

Reviewed: Nov. 1, 2007
Delicious! Will send you into a diabetic coma it is so sweet. Is more of a dessert drink b/c of all the sugar. I reccomend using diet soda and sugar free juice. Substituting pineapple concentrate for lemonade is delicious. If you're big drinker, you'll need more rum...can't taste it at all.
