Brooke's Best Bombshell Brownies

Best I've ever had. I use an ice cream scoop to place batter into muffin tins sprayed with no-stick spray. No cutting is cool!

Ten Minute Enchilada Sauce

That's the stuff! After years of looking for the kind of enchilada sauce I grew up with, this is it! I do add about 2 tablespoons of peanut butter.. it's traditional in California. Thanks!

Ten Minute Enchilada Sauce

That's the stuff! I've been looking for this flavor for years. Canned sauce just doesn't cut it. And it's so easy! I also added some peanut butter... that's how it's done where I grew up in California. Thanks!

Buffy's Refried Beans

Burrito Pie

Great recipe, but my family liked it much better with corn tortillas. The flour tortillas just seem gummy compared to the corn, and the corn adds a great flavor dimension. Followed other's suggestions and this is a winner!

Peanut Butter Bars I

Really great cookie bar. The pan was gone in one day in our 7 person household. I made the graham cracker mixture entirely in the food processor and melted the chocolate/peanut butter mixuture in the microwave so my prep time was less than 10 minutes. I accidently bought milk chocolate chips. It turned out to be a happy accident, since I'm sure it produced a more classic peanut butter cup flavor. The only problem was getting the bars to come out of the pan. Thinking about setting them on a heating pad for a few minutes to warm just the bottom long enough to allow them to release from the pan, the next time I make them... and there will be a next time!

Buffalo Style Chicken Pizza

This was a crowd pleaser! I used homemade ranch dressing, and I'm sure that made a significant difference in the end result. Bottled ranch is just a different critter from the scratch version. I made a quick crust in my food processor which produced a wonderful crunchy crust. This will be a regular addition to our family meal line up.

Flan Mexicano (Mexican Flan)

I liked the orange flavor and will use it in a recipe that I have used for years with more success. I have never seen cornstarch in any other flan recipe. Mine came out more like plain egg custard (admittedly it had a lovely orange flavor). Also, my recipe calls for a little water in the sugar to make the caramel. My sugar was nearly burned before it was fully disolved.

This recipe is so much better than the ingredients might lead you to think it might be. Deffinitely more than the sum of its parts. I don't change a thing ... and that's saying something!

Key Lime Pie IV

My experience making this recipe turned into an adventure. I thought that I had a reasonable expectation that I would be able to get 8 tablespoons of juice out of 30 key limes. I prefer Persian limes, believe me. Key limes are a headache. After 40 minutes of cutting, seeding and prodding all the juice I could out of the critters, I only had 4 tablespoons of juice. I had no other source of juice in the house, and time wouldn't permit a trip to the store. So! I decided that I would use some lemon drink powder and water to make up the difference. Well, of course, the water foiled the effect of the condensed milk and juice combination, yielding a watery filling. I decided to add 4 egg yolks, and baked it for about 40 minutes at 350. The pie was just great! Since it was for company, it was a breath holding experience, but turned out nicely. Don't know that I would recommend doing this exactly, but just thought I'd share.

Homemade Pudding

Great recipe! I didn't have any powdered milk, and substituted with non-dairy coffee creamer. Fabulous! I made my own chocolate pudding mix by adding 1 cup of cocoa. It has a bold chocolate flavor. Some might prefer a milder 3/4 cup, and using dutched cocoa would probably yield a mellower chocolate. I have been completely disappointed in boxed puddings of late. Either my taste buds have changed or the formula has changed. It's just not the same stuff I remember as a kid. This recipe brings it all back. Thanks!
