Double Layer Pumpkin Cheesecake

I followed the tips and additions to this recipe from the review made by SOUTHERNBELLE0908 (first reviewer under the recipe.) I used a water bath to bake it and let it sit in the oven for an hour after I turned the oven off. Wow -even a friend of mine that used to own a Cheesecake Shop in Mexico thought it was awesome! I also made a shortbread cookie crust. It was ridiculously delicious and much easier than I had imagined. **One Tip: Make sure eggs and cream cheese are at room temperature!**

Easy Sugar Cookies

My husband LOVES these cookies. One tip that I think is really important is to be sure the butter is COMPLETELY softened before adding it. Leave it out long before you plan to make the cookies so it can get mushy. Also, pull them out at 8 minutes and let them cool...they'll be nice and soft and chewy inside! Update: I've made these cookies at least 10 times and along with the above mushy butter, be sure to whip the wet ingredients until fluffy before folding in the dry ingredients. They are sooooo outrageous - we're eating them RIGHT NOW!

Potato Leek Soup I

I used half the potatoes (approx. 2.5 pounds) and par-boiled them in water, drained and rinsed the pot out. Then I finished boiling them in chicken broth. I also used a hand blender and when sauteing, a little less butter and a dash of flour. It was pretty thick so I added a little more broth to desired consistency. Overall...good stuff. I'm freezing it in batches as comfort food when recovering from my upcoming surgery.

Potato Chips

WOW!!! Just made these with both sweet potatoes and white ones. They are awesome. I used parchment paper on the glass turntable in my microwave. Sprayed the thin sliced (used one of those box graters) potatoes with olive oil - microwaved about 7 minutes (check as you add time) added a little salt and the are AMAZING!

Slider-Style Mini Burgers

Man...these are awesome! I brushed a little melted butter on the bun tops before baking. I baked them wrapped in foil without a cookie sheet. I used the Kings Hawaain mini buns and everyone devoured these! Thanks so much!

Good Old Fashioned Pancakes

Delish! I added a little more milk the second time I made them because they were too dense the first time and I wanted to thin the batter a bit. Anyway...we love these pancakes so much that we've even made them for dinner!

Awesome Sausage, Apple and Cranberry Stuffing

This was my first ever attempt at stuffing. My bf doesn't like pieces of celery & onions, so I was looking for something I could make that would still have flavor enough to be tasty even though I was leaving those things out. This recipe was delish! The rosemary and sage gave it such a yummy flavor. The apple and dried cranberries gave it texture and color and the only changes (other than omitting the veggies) I made were to use fresh herbs (doubled amount) and some extra butter brushed over the top the last 10 minutes of baking. Really good stuff!

Easy and Elegant Pork Tenderloin

This recipe is a keeper! After reading reviews, I decided to add a little salt, pepper & garlic powder to the pork before rolling it in the olive oil and then through the breadcrumbs. I also added grated parmesan to the italian style bread crumbs and put aluminum foil on the bottom of my baking sheet for easy clean-up. The other thing, and I think this was most important - TENT ALUMINUM FOIL OVER THE TOP for the first 27 or so minutes because if I hadn't done that, I'm quite sure the entire topping would have been burned. Anyway, this was absolutely delicious and very moist. My boyfriend enjoyed it so much that he requested a repeat performance next week.

Stuffed Pork Chops III

This is the first time I've made pork chops that didn't come out too dry. They were delicious and thanks to a few reviewers, I thickened the sauce a little with flour and it made a great tasting gravy.

Spinach Stuffed Chicken Breasts

Yum! The only thing I changed was to cut the cooking time to 30 min. (I think mine were a little on the thinner side) and then I put the oven on broil for about 7 minutes. Served it with garlic smashed potatoes and a big salad...we loved every bite!

Vegan Fajitas

I enjoyed this dish and only made a few minor alterations (extra chili powder, a clove of garlic, left out the corn, little less vinegar/oil) came out great! Served with whole grain tortilla shells and even though I'm not supposed to eat it...I topped my fajita with a tsp. of sour cream before wrapping it up. Good stuff! I think sliced avacado would be a nice addition, wish I would have had one at the time.

Ricotta Stuffed Zucchini

Delicious! It's a great change from the usual way I've always prepared zucchini. I added a clove of crushed garlic to the mix and sprinkled a little italian bread crumbs on the top. Will make again...and again! My daughter LOVED it!

Cream of Fresh Asparagus Soup II

This soup is excellent, makes a beautiful presentation and tastes so fresh! I did use a few suggetions from other reviewers such as NKBURLINGTON who advised cooking up a little bacon and using the grease to saute the asparagus and onion before adding the chicken stock. I also added some garlic and sauteed the saved tips in a little olive oil before garnishing. The lemon added a really nice flavor.

Yum! Peel and freeze the bananas first in ziploc baggies. (break into 3-4 pieces first so it's easier to blend)Then you can omit the icecubes. (I used creamy peanut butter)

Flourless Peanut Butter Cookies

Easy and Delicious! I used 1/2 brown sugar and 1/2 white and since I was (gasp!) out of vanilla...I put a splash of almond extract instead. My daugter and I gobbled them up last night and she just begged me to make more...since I'm a softie...I'm on my way to the kitchen! Thanks!
