Cuban Beans and Rice with Chipotle Chorizo Chicken Sausage

I really like this recipe. I don't like pinto beans so went with all black beans. I added a bit more cumin (because I love it). Did find I could've added a little more chorizo and peppers but thought it was really good. Served it with garlic break (because I had some I had to use up). Another bread might've better but my family liked it all!

Linguine with Seafood and Sundried Tomatoes

I loved this. I used two tablespoons butter and two of olive oil; might've added a tad more but it was great. No clam juice so all white wine with a little fresh lemon juice. Used flour to thicken. Dee-lish!

Indonesian Pork Tenderloin

I've had hit or miss pork tenderloin but this definitely was a hit! I too was worried about the crushed red pepper flakes but they were just perfect -- it's different in a dish when mixed in; this is perfect to give a little zing to the exterior without overpowering. My husband and 8 year old loved it as well. Definitely added to the pork tenderloin repertoire!

Bubba's Jambalaya

Really like this a lot. Made it exactly to the recipe except I didn't have beef broth so used double chicken broth. Family loved it but felt like it just needed something small in the finish like cilantro? Need to figure it out but it was otherwise awesome!

Souvlaki

I made this with chicken and while it was good it wasn't the souvlaki I'm used to. I marinated this overnight and it still wasn't as garlicky as I'd like. I would at least double the garlic and increase the oregano to achieve the flavor of souvlaki at greek restaurant's I've been to. I didn't skewer this either; had my hubby just basket grill on the barbeque. Veggies were delish but still missed strong flavor in the meat...

Baked Beans II

My Mom makes the best baked beans ever. But they have to soak overnight, and require several hours of baking in the oven. I just don't have time. Thought this recipe had similar ingredients to hers without the time investment. I was NOT disappointed. This recipe was AWESOME. My mom used molasses, so I did use another reviewers comment and reduce the brown sugar and add some molasses. I also swapped the ketchup for chili sauce. These were absolutely delicious. My Mom even asked for the recipe! Served it with a homemade mac n cheese and a spinach salad with asiago cheese, pine nuts and mushrooms. Was the best "comfort meal" I have ever made (if I do say so myself!). Mom, Dad, hubby and son agreed. Thank you!

Pork Apple Burgers

I liked these but feel like they really needed some great toppings to make them great. Next time I will try them with bacon on top. My peeps didn't like the pineapple but I did. Added mayo as well and ketchup for my 8 year old (it makes everything better for him). It was freezing outside so I broiled them in the oven, turning when brown and thought this was a great alternative to bbq, particularly when I read so many fell apart on the grill. May look at other reviews closer next time to find a way to create a flavored mayo that would complement.

Whole Grain Banana Muffins

Loved this recipe! Didn't have the pastry flour or oat bran so just used all whole wheat which sometimes can be dry. Not so -- really moist and yummy. Threw in chocolate chips with raisins (1/2 and 1/2). Added chopped pecans but next time would pan roast them first as I found them a little bitter. Otherwise really, really good. Had one ripe banana left over so sliced it and put it on top before baking. Looked nice.

Oatmeal Gingersnaps

Loved this recipe. Had my own long-time favorite version, thicker and chewier but have somehow lost it so have been searching for another. This is thinner, but still really delicious. I only slightly pressed down on the cookie balls as I like a thicker version. Given this I would caution re the shorter baking time. Still too doughy at 10 minutes. My oven is pretty good, but I needed more like 13-14 minutes. Turned out slightly crispy on the outside, chewy on the inside. My family ate the whole batch in two days. Making another now...

Yellow Squash Patties

I couldn't get any moisture to drain off the squash, even leaving it overnight in the fridge (when I mixed in the salt it got pretty mushy. I added the garlic like others suggested and made the patties bigger (fish cake size). It took a really long time to brown them, but they tasted pretty good. I'm definitely going to add some of the spices suggested as I felt they lacked something. Totally worthwhile making, though, and a nice change.
