Chocolate Pound Cake III

Fabulous cake. Very dense and rich, full of flavor. And for those of you who like to lick the bowl, the batter tastes like chocolate mousse!

Jim's Perfect Steak Marinade

This is a really simple, yet amazing, marinade. I thought it was good on the rib steaks, but it was even better on the sirloins. I admit it didn't taste the way I expected it to taste, but that's rather a good thing, because I was afraid it would taste too much like soy sauce or teryaki.:-) Half the recipe was enough for 3lbs of steaks. I used the ziplock method.

Gluten-Free Yellow Cake

Great recipe! I used brown rice flour instead of white, but it was still perfect. This is the first rice flour cake I've made that actually had a decent texture the day after it was made. I don't know if the secret is the mayo or what, but I am making this one again! Thanks so much for this recipe!

Black Beans con Jalapeno

My husband didn't measure anything exactly, and we were out of cilantro, but despite that, this salad was fabulous! It would only be even better with the cilantro, I'm sure. He used canned jalapenos because the fresh ones we had were incredibly hot and we wanted our kids to eat the salad.:-)

Cappuccino Muffins

My husband thinks this recipe deserves 5 stars. I did not follow the recipe exactly, though. I made it gluten-free, for one, using BRM GF all-purpose flour. And I did not use milk and instant coffee granules. Instead I used a cup of strong cold coffee. And I replaced the cinnamon (which me and my baby cannot have) with allspice and nutmeg. This recipe was just what I was looking for, and I was happy to find it!

Coffee Butter Frosting

Great taste, great directions, great consistency for spreading. This frosting is a winner! This is a fabulous fluffy mocha frosting. This does NOT have a strong flavor or either coffee or chocolate, but is a lovely nice combo of both.

Flourless Chocolate Cake I

This deserves 5 stars because it doesn't just taste great, the recipe works perfectly, and the cake looks beautiful, too. Other flourless cakes fall in the center, but not this one! It was pastry chef quality, and we all loved it!

Fresh Cherry Cobbler

Excellent, easy recipe! I doubled the amount of cherries, and it worked very well. I also tried a pineapple version, using brown sugar instead of white, and it was even better. Both times I reduced the sugar in the batter to 3/4 cup, and the sugar on the fruit to 1/2 cup. I used sweet cherries, and canned crushed pineapple.

Green Pea Poulourie

Yes, I did adjust this recipe to fit our diet, but the modifications I made did not in any way change the integrity of the recipe. This recipe is fantastic! I used yellow split peas, which yielded a much more typical looking batter. I used cumin instead of curry powder, and jalapeno instead of serrano, coconut flour instead of flour (and less than half as much, since coconut flour is very absorbent), and baking soda instead of baking powder. I also added a coupled tablespoons of olive oil to help the blender blend up the peas a bit better. I also made mine bigger - dropping the batter in rounded tablespoons instead of teaspoons. These were fabulous, and everyone loved them, from my husband on down to the 17mo twins. We dipped them in salsa.

Swedish Rye Cookies

These are fabulous and easy to make. Despite the low amount of sugar, they still taste like a cookie and not a cracker. I just cut mine into squares with my pastry cutter instead of cutting circles, and I got 3 dozen 2in. cookies.

Applesauce Cake IV

Excellent recipe! I made it with gluten-free flour, half the sugar, and no raisins (didn't have any), and the flavor was fantastic. The texture was very good, but it fell apart, due, I'm sure, to the gluten-free flour. I will add an egg or two in future to help with that. Thanks for a great recipe!

Jewish Style Sweet and Sour Brisket

I thought this recipe was excellent. I followed it exactly, except that my brisket was 6lbs, so I added a little more water to the pot. I used homemade spicy ketchup, and raw apple cider vinegar. It was perfectly seasoned, and very tender. Thanks for a great recipe! I am saving this one!

Thanksgiving Beets

These couldn't be better. The only change I made was to use honey instead of brown sugar, and the result was amazing. I let them simmer while I made the rest of our meal, and then let them sit to cool a bit before serving. So they were not hot when I served them, but warm, and everyone loved them. The flavor is excellent, and I am sure I will be making these again and again. Yet another wonderful way to eat beets!

Grandpa's Popcorn Balls

Fabulous recipe! It worked perfectly for me. The only thing that is off is how many popcorn balls the recipe says it makes. It claims to make 10 3in balls, but my son and I got 24. I'm pleased!

Skillet Fish Dinner

I made this recipe as written, only I used a little more fish in order to have enough for my family, so I also used a little more Old Bay seasoning. My whole family loved it. The combination of flavors is perfect. This would also be great with shrimp.

Old Fashioned Coconut Cream Pie

I got rave reviews with this pie. People claimed they'd never eaten a better one. After reading all the reviews, I did make a few changes, though. First, I used half coconut milk/half cream instead of regular half and half. Second, I used rice flour instead of regular flour. Third, I used grated macaroon coconut instead of flaked (I think the flaked tends to be too sweet). Fourth, I used real whipped cream for the top, with just a hint of coconut extract in it.:-) I am thinking of trying it with coconut milk in place of the entire amount of half and half next time.
