Black Beans con Jalapeno

My husband didn't measure anything exactly, and we were out of cilantro, but despite that, this salad was fabulous! It would only be even better with the cilantro, I'm sure. He used canned jalapenos because the fresh ones we had were incredibly hot and we wanted our kids to eat the salad.:-)

Jim's Perfect Steak Marinade

This is a really simple, yet amazing, marinade. I thought it was good on the rib steaks, but it was even better on the sirloins. I admit it didn't taste the way I expected it to taste, but that's rather a good thing, because I was afraid it would taste too much like soy sauce or teryaki.:-) Half the recipe was enough for 3lbs of steaks. I used the ziplock method.

Tarragon Beef Stew with Vermouth

This was an excellent stew, but I'm not giving it 5 stars because after reading other reviewers, I did not use the water called for, I used only the honey, not the sugar, and I used a fruity wine since I didn't have any vermouth. I look forward to trying it with vermouth as called for.

Old Fashioned Coconut Cream Pie

I got rave reviews with this pie. People claimed they'd never eaten a better one. After reading all the reviews, I did make a few changes, though. First, I used half coconut milk/half cream instead of regular half and half. Second, I used rice flour instead of regular flour. Third, I used grated macaroon coconut instead of flaked (I think the flaked tends to be too sweet). Fourth, I used real whipped cream for the top, with just a hint of coconut extract in it.:-) I am thinking of trying it with coconut milk in place of the entire amount of half and half next time.

Pineapple Rhubarb Pie

Excellent recipe! I got lots of good comments on this pie. The rhubarb and pineapple pair very well. My only comment is that this recipe does not make a deep dish pie. When I made it in my deep dish pie plate, it was disappointingly shallow. The next time I made it, I simply increased the filling ingredients by half to get a full pie. I will definitely make this pie again and again.

Warm Flourless Chocolate Cake with Caramel Sauce

I make this in a spring form pan, rather than trying to invert it on a plate, but it's a great recipe, very rich. One cake can serve a lot of people! It is perfect with raspberries and whipped cream. I love the caramel sauce, but I have to agree that it's not really the right accompaniment for this cake. I prefer to use the sauce on ice cream.:-)

Baby Beet Salad

This was a very tasty beet salad. I used a yellow onion because that's what I had on hand. I think a mild purple onion would work, but not a strong one, so be careful!:-) I will use a ssweet onion next time. The beets and oranges went together beautifully. I did not use canned beets, but my own beets: oven roasted in foil, peeled, and then sliced. It had a good flavor after 2 hours in the fridge. I think it will taste even better tomorrow, and perhaps the onions will be milder and easier to eat.

Skillet Fish Dinner

I made this recipe as written, only I used a little more fish in order to have enough for my family, so I also used a little more Old Bay seasoning. My whole family loved it. The combination of flavors is perfect. This would also be great with shrimp.

Gluten-Free Yellow Cake

Great recipe! I used brown rice flour instead of white, but it was still perfect. This is the first rice flour cake I've made that actually had a decent texture the day after it was made. I don't know if the secret is the mayo or what, but I am making this one again! Thanks so much for this recipe!

Cappuccino Muffins

My husband thinks this recipe deserves 5 stars. I did not follow the recipe exactly, though. I made it gluten-free, for one, using BRM GF all-purpose flour. And I did not use milk and instant coffee granules. Instead I used a cup of strong cold coffee. And I replaced the cinnamon (which me and my baby cannot have) with allspice and nutmeg. This recipe was just what I was looking for, and I was happy to find it!

Chocolate Marshmallow Frosting

I had to pipe up and say that this recipe works perfectly fine exactly as written. I had my doubts, particularly because of other reviewers' comments. I didn't give it 5 stars because I really don't care for marshmallows, and this definitely still tastes like marshmallow when it's done - just a rich chocolate marshmallow instead of a regular one. It used up my marshmallow creme, though, and that's what I was aiming for, so I was pleased. I don't think it would frost a layer cake. I frosted a 9x13 only on the top, and had very little extra.

Chantal's New York Cheesecake

I made this in a jelly roll pan without a crust. Baked it at 400F for 10 min, turned down to 200F and cooked another 20 min., turned the oven off, and didn't open it until morning. Very good flavor and texture. Only problem was trying to mix in the flour without clumps.

Jewish Style Sweet and Sour Brisket

I thought this recipe was excellent. I followed it exactly, except that my brisket was 6lbs, so I added a little more water to the pot. I used homemade spicy ketchup, and raw apple cider vinegar. It was perfectly seasoned, and very tender. Thanks for a great recipe! I am saving this one!

Simple Scones

Very good recipe. I can't give it 5 stars because I didn't make it as written. I used one cup brown rice flour, and one cup oat flour. I added 1/2 teaspoon ground cinnamon, and a sprinkle of ground nutmeg. I cut the butter down to six tablespoons, because rice flour doesn't seem to absorb fat very well. I thought they turned out very well. They baked very nicely, and taste wonderful.
