Scalloped Corn I

Reviewed: Apr. 16, 2011
This stuff is amazing. I've made it twice now...once as written, and once I cut the butter in half, used fat free sour cream and added an extra box of Jiffy corn muffin mix. Liked it way better the second way. Everyone at the family reunion requested the recipe and had second and third helpings! :)

Baked Oatmeal II

Reviewed: Sep. 22, 2010
Loved this! I reduced the sugar to 3/4 cup, and substituted apple sauce for the butter. It turned out great. I served it crumbled in a bowl with milk on it like cereal. Really good, like a cross between oatmeal and granola. You can really play around with this recipe adding different fruits, nut, or seeds to it. Yummy.

Magical Dressing

Reviewed: Sep. 13, 2010
I loved this recipe! I did substitute kraft FAT FREE zesty Italian salad dressing for the oil. I just couldn't bring myself to eat that much oil, but even with the substitution it was fabulous! I ate it on a spring mix green salad and poured it over roasted red potatoes, yummy!

My whole family did not care for this recipe. It had a slightly bitter taste, and an awful texture.

Avocado, Tomato and Mango Salsa

Reviewed: Jul. 21, 2010
This is awesome! I totally love it, & I hate mango. This is the only way I'll eat it. I left out the oil, just to cut out the fat and didn't miss it at all.

Plum Quick Bread

Reviewed: Jul. 21, 2010
I expected this to have the texture of banana bread, or a muffin. Instead, the texture was that of an oily sponge. Couldn't even taste the plum at all...very disappointing.

Peanut Butter Pie X

Reviewed: Apr. 13, 2010
I made this recipe with high hopes, and was disappointed. Everyone ate it, but with the left-overs, everyone scraped the filling off and ate the crust only. The texture of the filling was too soft and goopy, not firm enough. Almost like a pudding consistency. I will keep looking for a recipe we enjoy.

Microwave Caramel Popcorn

Reviewed: Oct. 19, 2009
Exactly what I was looking for with a small change. There is a woman in our neighborhood who makes this and refuses to give out the recipe. Everyone is dying to have it, and I found it on here! The only change I made is to substitute white sugar for brown and use a plastic bowl with lid instead of a paper bag. SOOOO GOOD!

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Aug. 5, 2009
PHENOMENAL!!! This recipe is restaurant quality for sure! I skipped the flour step and added 1 tbs brown sugar when reducing the sauce. I also used fresh thyme. I was eating the sauce by the spoon full...sooooo amazingly good. Will make this again and again.

Peanut Blossoms II

I gave this four stars because my husband loved them. I wasn't such a fan. They are soft and the texture is perfect, however I thought the taste was a little lacking.

Honey Mustard Dressing II

Reviewed: Dec. 19, 2008
This recipe is great! I substituted a good quality ranch dressing for the mayo, as I don't care for mayo. I served it with a fried chicken salad, tasted just like what you'd get at a restaurant! We loved it!

Pumpkin Cheesecake II

Reviewed: Dec. 4, 2008
This was an awsome recipe!!! Everyone loves it, as do I. I did make a few changes: Use 1 pkg 14oz of ginger snaps and 1/2 cup melted butter for crust with same as called for sugar. Use allspice instead of mace, 1/4 tsp extra ginger and cin. No lemon extract, but 1 whole tsp vanilla. Full cup of pumpkin. Cook with two small bowls of water in the oven with it. Top with 1/2 Block Cream Cheese 1/3 Cup powder sugar 1 tsp Vanilla 1-2 tsp cin (beat until fluffy and then beat in: 1 container fat free cool whip refrigerate and serve drizzled with hot butterscotch carmel sauce. Yummy! Way better than Olive Gardens!

I made this for thanksgiving a couple of years ago, now it's requested every year. When I tell people how easy it is to make they are shocked. I have never liked cranberry sauce until I made this one, now I love it! Try this recipe you won't be sorry.
