Bacon-Wrapped Scallops

Very good recipe. Easy to make. I use the already cooked bacon you get in a box at the store and wrap them. They don't take as long to cook so the scallops don't get overdone and a lot less fat.

Caper Baked Chicken

This is delicious as written. I butterflied a whole chicken by removing the backbone and flattening in in a roasting pan. And doubled the sauce amount. It was great. Nice company recipe.

Sheryl's Baked Potatoes

These are also called ladderback potatoes. I insert a bamboo skewer about 1/3 from the bottom of the potato long ways. Then slice the potato down to the stick. I use a nice long russet potato. You can remove the skin or leave it on. I use buttered bread crumbs with herbs of your choice in between the layers and top with a good parmesan cheese. They are a very nice company dish and easy to make.

Buttermilk Baked Chicken

I used regular carnation evaporated milk and lemon juice. I added lemon zest as well and regular paprika with some smokey Tabasco sauce. Delicious. I wiped excess marinade off with a paper towel before dipping in flour. Stayed on just fine. This is a great recipe for guests. Easy to prepare ahead of time and bake off when your ready. It is just fine marinated in the am and cooked for dinner.

Quick Chick!

This is a good recipe but I omit the jarred gravy and add potatoes. When about 1/2 hour from being done I open a can of biscuits and place on top. They come out tasting like dumplings.

Unbelievable Chicken

Fantastic recipe. Please do not use bottled lemon or lime juice. Fresh makes all the difference. No wonder one reviewer didn't think it was unbelievable. I used the George Foreman grill and it was still terrific.

Smokin' Scovilles Turkey Chili

I have made chili most of my life and wanted to cut some of the fat and use turkey. This is the best I have ever tasted bar none. My son in law, who loves chili, said this was the best he ever had. I added grated cheese and tortillas to serve on the side. Will make none other now. Thanks so much.

Easy Grilled Chicken Teriyaki

I have made this recipe twice using my counter top rotisserie. Once with a small whole chicken on the spit and once with pieces using the rotisserie container.Marinated overnight. I saved a little marinade to baste as they cooked. It was wonderful each time. So if you happen to live where grills are not allowed you can still have great "grilled" foods like this.

BLT Iceberg Wedge

I have made this recipe in the past and it's a great summer lunch. It is so refreshing to have a nice cold wedge of crispy lettuce. I like to make the packaged ranch dressing. No other lettuce gives you the same texture. Serve it with good bread and an avocado half.

Deviled Eggs I

This is a very good standard recipe. I sometimes add a bit of celery seed or very finely minced fresh dill. I put the paprika on top not in the mix. Also you can use a more flavorful mustard for extra zip.

Classic Tossed Salad

Bacon Wrapped Dates Stuffed with Blue Cheese

Fantastic. I use precooked bacon-1/2 strip per date. I use the toaster oven. Much less fat. Also feta cheese is good as well. For those who do not eat meat you can omit the bacon and add an almond or pecan.
