I'm so glad I ran across this recipe, it was the perfect brunch item today. Not having small potatoes on hand, I substituted a large yam - it worked perfectly! So much so, I'm going to keep the change and make it permanent. DELICIOUS.

Spaghetti Squash I

Great recipe. I have loads of spaghetti squash from our CSA and was at a loss for how to make it for my family. Thank heaven I found this recipe. It will be a long lasting favorite!

Broccoli with Garlic Butter and Cashews

Delicious. My family loved this and we would really recommend it! Made with fresh broccoli, tasted amazing! I almost substituted walnuts, but found I had cashews, and the taste was so well matched, I'll never think to stray again!

Tofu Parmigiana

This was so amazingly good, I am putting it in my family's top recipe choices. Filling too. Thanks to all the reviews, I came up with an alternate style that meant I didn't have to make the casserole. I simply served the breaded tofu, after baking for 30 minutes over angel hair pasta with vodka sauce. Yummy simple goodness.

Kielbasa with Pasta

I was hesitant to make this at first, but I was so intrigued I couldn't resist. I used Tofurky brand "vegetarian Kielbasa", which worked fine, I used 1 can less of the tomatoes, since they're not my kids' favorite, and I added 16 oz of sauerkraut. All in all, the dish was PRIMO! Thanks for the great idea. :)

Cabbage, Potato and Baked Bean Soup

Great recipe! We used danish cabbage (leftovers) so there was already some sour cream and caraway seed mixed in. I thickened it with some cornstarch and made drop dumplings for the top. I stewed them all together for 20 minutes and we had a great meal! Thanks for the recipe.
