Southern Spain-Style Gazpacho

This is the first time making Gazpacho and I found it lovely and very refreshing. I peeled and seeded the tomatoes and added a small stalk of celery because I was trying to use up as much produce as I could. That being said, I found the consistency of the soup a little thick for my liking so I thinned it out with no-salt tomato juice. I will definitely make this again.

Popcorn Snack Mix

This was soooo good. I couldn't wait to make this recipe but all I had was butter-flavored popcorn. It didn't make a difference. It was still great! I made half the recipe and my family and I finished this off in two days! This is a keeper!

Chicken Noodle Salad with Peanut-Ginger Dressing

I thought this was a very flavorful and healthy dish. Took others suggestions and doubled the dressing which was all absorbed by the noodles and the chicken. Yummy! However, DON'T DOUBLE THE CHILI-GARLIC SAUCE! My mouth was on fire...but it hasn't stopped my husband and I from eating it. I added some julienned cucumbers to help cool it off. Great for a crowd. Will be making again with only 1 T of the chili-garlic sauce.

Grilled Gyro Burgers

I really enjoyed this recipe. The cucumber sauce was perfect. The beef patties were moist and stayed together and my pita didn't fall apart. I served this with chopped onion and tomato. This almost satisfied my gyro craving but I think if you incorporated ground lamb, coriander, cumin, etc. it would be more authentic. I will make again.

Pizza Pinwheels

These were awesome and they were eaten up immediately. I followed the recipe and served this with marinara and (my favorite) homemade Ranch buttermilk dressing. They aren't the healthiest so I try not to make these too often.

Six Can Chicken Tortilla Soup

My husband absolutely loved it. I was okay with it. Definitely a great base to start out with and then add your own ingredients too. Will use again but probably for camping or something.

Crookneck Squash and Tomatoes

I tried the recipe because I love yellow squash but dislike cooked tomatoes. My husband (hates veggies in general) and I didn't finish our portions. I'm sure the recipe is fine but just not to our particular tastes.

Poblano Chile Enchiladas a la Gringa

I really liked these enchiladas and the heat was just right for me. However, my husband felt they were a little bland (he likes more than just heat). Because of the prep work and his less than stellar review I cannot give this 5 stars.

Texas Sheet Cake IV

Just wonderful! In my opinion, it just isn't authentic Texas sheet cake without the addition of coffee. My husband loves chocolate cake and had never had this before. He said it was the best cake he'd ever had and now has a new favorite!

Mary's Roasted Red Pepper Dip

I made this dip and it went over so-so. I thought it was good but not great. I probably won't be making this again because SEVERAL people that tried it said, "oh, it's pimiento cheese." That took away from the dip to me.

Black Bean and Couscous Salad

I made this recipe for a large family get-together and it went over BIG! Several people asked for the recipe and even called me several days later to ask for it. I also recommended to my sister who lives out of state and she took it to a potluck and she said that she got tons of compliments. Very foregiving recipe so you can add more or less of any ingredients to taste.

Chicken Enchiladas II

My husband & I really enjoyed this recipe. He like his dish extra spicy so I added 1/2 a can of green enchilada sauce & it was perfect and stretched the sauce out. Will definitely make again.

Asian Chicken Salad

I love asian food but my husband doesn't. He does love salad so I gave this a try. Glad I did because my husband loved this salad and kept going back for more. The only reason I am not giving this 5 stars is because the rice vermacelli (cellaphane) didn't work at all so I had to omit them. Next time I will just sprinkle the salad with already fried rice noodles like in the picture. It's a keeper!

Roasted Potatoes with Greens

I made this for a friend visiting town and it went over very well. Only thing I would do differently is bake this in a single layer like the recipe says. I just dumped it in a casserole dish and they didn't crisp up but were a little greasy for me...still delicious, just not crisp enough for my liking. I added this to my master recipe book. Single layer next time.

Asian Tuna Patties

These tasted just as good as I had hoped but I don't think they are for everyone. Great flavor & fun to make but I know my husband prefers his tuna in a casserole if he had the choice. I will make them again, for myself. I'm sure they would freeze well.

Burrito Pie

This was a very good recipe. My husband ate 3rd! Only thing I did differently is that I bought refried beans from my favorite Tex-Mex restaurant, way better than canned. Very easy, very fast - its a keeper.
