Creamy Squash Soup

I made this as stated and wasn't too thrilled with the finished product. I may have just been personal preference. I'm not a fan of indian food, but if you are you might love this soup. I added 1/2 grated parmesan and 1 cup vegetable juice. I found it to be edible then. I commited to eating it though and by my 3rd serving it really had grown on me.

Sarah's Rice Pilaf

This is a wonderful, simple side dish! I used homemade chicken broth, so I did add some salt at the end for flavor. I'm looing forward to trying it with beef broth also! Bravo.

Easy Tilapia

I don't typically care much for fish, but do incorporate it into my family's diet for health reasons. That being said, i LOVED this dish! Everything blended so well together. The only thing I changed was touse 5 tilapia filets and about 1.5 (1 bunch chopped) asparagus. I kept all other measurements the same. I also put the asparagus in with the wine & tomatoes since i worried that if added with the fish it wouldn't have enough time to cook. It came out perfectly firm but cook. This dish might make a weekly rotation.

Whole Egg Mayonnaise

I used EVOO instead of vegetable oil and honestly, I think it tasted TERRIBLE. I will try again with a different oil at a later date and see if it makes a difference.

Moroccan Tagine

Very tastey! Made just as stated this time. Next time I will double the chicken (we're big carenvours) and up the carrots to about 4 since we love cooked carrots in our house. Had a very light flavor that we really enjoyed. We served over couscous. YUM!

Beef Bourguignon II

No doubt a five star dish. I made EXACTLY as called for using Holland House Red Cooking Wine. I was leary of this dish since I do not enjoy drinking red wine, but much to my surprise the meat had a wonderful flavor. It was perfectly tender and there was just enough sauce. Next time I will make slightly more sauce, use extra carrots (which took on the flavor beautifully) and use fresh mushrooms instead of canned. YUM YUM YUM!

Carrot, Tomato, and Spinach Quinoa Pilaf

Wonderful recipe! I used 2 cups of the "Chicken Broth in a Slow Cooker" recipe from here instead of the bullion and water. I also used canned diced tomatos instead of fresh (it's all I had) and used Red quinoa. This dish had a wonderful flavor that wasn't overpowering. Very light dish. I will definately make again. The only think I will say is that it took way longer than 10 minutes for the liquid to absorp. Maybe closer to 30 mintues.

This was a wonderful recipie! Next time I will use enchilada sauce instead of the salsa. I made homemade chicken stock and this was perfect to use the chicken for.

King Ranch Chicken Casserole I

We loved this. I used onion powder instead of real onion, and used chicken breasted cooked in Hidden Valley Ranch powder mix. Will definitely make again.
