Dave's Georgia Black Eyed Peas

Born and raised in North Georgia into a family of real good Cooks. These are the best Black Eyed Peas I have ever eaten. Don't change the recipe at all...it's perfect. A bowl of peas, with a dollop of home made chow-chow and a big slice of cornbread and you have the perfect meal. Just fabulous.

Liver and Onions

Easy and very tasty. I will probably cut back on the sugar the next time. It doesn't really need it, the onions will sweeten as they caramalize.

Down-South Style Green Beans

My Mom died 15 years ago and my Sister-in-law and I have been trying to re-create her green beans ever since, to no avail. I tried your recipe in the crockpot and the flavor was just really close to hers. What made her's special was, she always forgot them on the back of the stove and they would burn. The flavor was heavenly with a caramalized touch! I made your beans and cooked for 3 hours in the crockpot. Then I put them in Mom's old pot on the back of the stove and left them to simmer for HOURS!. When I smelled the burning start I pulled them off the heat. PERFECT!!! My entire Family thanks you!

Slow Cooker Creamed Corn

Pretty good and takes a fraction of the time it takes to do it the old fashioned way. I would suggest letting the corn thaw and pulsing it a second in a processor first. It releases the "milk" inside the corn and makes it closer to the real thing. I also mixed a little flour in a bit of the hot liquid to thicken it up a bit.

Cadillac Pimento Cheese

I made this with sharp cheddar because I really don't like Velveeta "cheese food." The flavors were good with the onion and garlic. But the consistancy was too creamy for me. Maybe as a filling for celery it would be OK. It didn't have the texture I like in a sandwich.

Golden Broccoli Bake

Decent recipe for an easy quick dinner. I used what I had in the pantry....golden mushroom soup, tater tots, a combo of mild cheddar and mozzarella cheeses. I sauteed onions and garlic and added the meat. This is a good "base" recipe to tweak. Will make again. Could easily go low carb using the faux tater recipe on this site.

Juicy Roasted Chicken

Sometimes you just want a simple roast chicken without all kinds of added flavorings. This fits the bill perfectly. I did brine it for 4 hours ahead of time, but it probably wasn't even needed. (Simple Chicken Brine on this site.) Excellent bird.

I used on a 5 pound whole chicken. It really made for a tender bird, almost too tender. Next time I will leave in brine for about 4 hours instead of the 8.

Grandma's Corn Bread Dressing

Nobody I know uses a boxed mix because they contain sugar and that's a "sin" to a Southerner. I made my cornbread from scratch. It was pretty good, but too crumbly to me. Will use more broth and egg next time. Also add more celery.

Cheesy Catfish Chowder

Very nice. I agree with another cook that suggested a dash of curry. It made the dish. I also added garlic, bay leaf, parsley, hot sauce and paprika. This recipe will be a good base for other seafoods or meat.

Slow Cooker Lasagna

I followed the suggestions of others and cut the cooking time down to 2 1/2 hours. The noodles were still mushy, The remaining meat sauce tastes ok, not anything special, and I will figure out something else to do with it. It will need some spices and major doctoring. .

Seafood Salad Supreme

I used that "fake" crabmeat and good local shrimp. It was pretty good, but next time will use real crabmeat if I can afford it or just shrimp alone. That fake crabmeat is awful.

Chicken Stock

Seafood Gumbo Stock

Very good, but use sparingly as it is real strong. I made my world's famous gumbo using this instead of chicken stock and everyone said it tasted too "fishy." Next time I will uses half and half with Chicken stock.

Make Ahead Breakfast Casserole

Pretty Good. I used pepperidge farm stuffing mix as the base and it turned out too "gooey" on the bottom. Will use croutons next time. I had a lot left over and it was even better on the second day.

White Cheese Sauce

I have been making Mexican cheese dip/sauce for years, but decided to try this one. Like other reviewers, mine turned out grainy with a bad texture. It's nothing like the white cheese sauces and dips in Mexican Restaurants all across the South East. Will not make again.
