Amish Peanut Butter

Delicious. But I blew the motor of my food processor on this because it's so thick. We're in Amish country too and this is a lot heavier on the corn syrup than what I've seen. I would add more peanut butter but I'm out. We're putting it on crackers but I'm not letting anybody dip because the crackers will break.

Best Buckwheat Pancakes

I make pancakes with some regularity and our family always enjoys it. That said, this was a poor recipe. When I mixed it all up, it seemed unusually runny to me. When I cook them, usually the first few pancakes are a little flat and then they get fluffier as I cook and the batter has had a chance to sit. Not these. They were all flat. Then when we tasted them the soda flavor was dominant. I tried masking it with vanilla but it didn't help. They were also rubbery, which suggests too much egg and liquid. I think pancakes need some baking powder too. The one thing that might affect my experience is that I have a large family and have to multiply the size of most recipes. Maybe when doing so the measurements need to be adjusted for certain ingredients. But for the dominant taste in the leavening (soda), you'd think they would have risen at least a little. I'm going back to my old way of pancakes by using my favorite recipe and substituting half the flour with buckwheat. That's always worked well for me. The silver lining here is that as you try things that don't work, you get that much better and know better what you're doing. Thanks for the recipe all the same.

Boston Baked Beans

I liked this recipe just fine; the taste was overall good. The one thing that stood out to me is that I do think it was too ketchupy. It didn't have as strong of a molasses taste as I expected and as I remember having in the recipe I grew up with. So I added a lot of molasses and next time would cut back on the ketchup. I'd probably increase the other seasonings as well to counter the strong ketchup taste.

Espresso Biscotti

This is definitely a favorite! It was hard to not eat the dough and the cookie after the 1st baking! The combination of dried cranberries, almonds, and chocolate is wonderful! I gave it 4 stars instead of 5 because I found I needed to tweak it. The dough was too dry & crumbly, so I added a splash of milk so I could manage the dough. Also, I couldn't taste the coffee, so I would increase that. I do think the chocolate brings out the coffee flavor a bit. This is a real keeper!

Easy Minute Steaks

This turned out to be the quintessential comfort food for us together with mashed potatoes and homemade bread. I browned them with flour before putting them in the crockpot. The soup made a perfect gravy.

Pumpkin Pancakes

After reading other reviews, I altered mine a bit. I doubled the recipe for my big family, but instead of doubling the pumpkin to 2 cups, I used 1.5 cups. The batter was therefore less heavy and had a nice texture. I also turned down the heat by 50 degrees and edged it up so I could control cooking speed. I also adjusted seasonings to my taste--just cinnamon and nutmeg, as we prefer. And as I usually do with pancakes, I used half all-purpose flour and half soft whole wheat flour. I make my own maple syrup with maple flavor extract and threw in a little cinnamon. Five stars for this filling, tasty treat!
