Whipped Cream Cream Cheese Frosting

This is a staple piped cupcake topper in my house. I generally whip light cream cheese with 1/2c granulated sugar, then whip the cream separately with the other 1/2 cup granulated sugar and vanilla added gradually. Whip until almost butter! Then fold both together. I can pipe this without issue. (Or eat it straight from the bowl, lol)

No Bake Double Good Dessert

This was so good and so easy! Used real whipped cream though. Also, I used generic brand "chocolate sandwich cookies". Will definitely use the real kind next time - I can taste the difference.

Chocolate Pumpkin Cake

This is my go-to cake recipe. It tastes rich but is deceivingly less caloric than a lot of cake! And nobody knows that but me! I've used it with several kinds of cake mixes too, and they all come out very tasty. My absolute favorite icing with it is the WHIPPED CREAM CHEESE FROSTING. from this site...

Power Cookies

With an extra 1/2 cup of milk, these are terrific! Used choc chips instead of raisens, omitted the walnuts and made squares by putting the batter in a 9X12 pan. Baked for 25 minutes and cut into 18 squares. Excellent as a granola bar - high fiber and around 150 cals.

Sand Art Brownies

I used a 750 ml jar for these. Such an easy and inexpensive gift!!! Pretty too. Used Callebaut white chocolate chunks instead of vanilla chips.

Southwestern Pasta Salad

Very good! Reduced oil to 2bsp. Used a can of tomatoes but will definitely use fresh next time. Will make this again, maybe with some chili flakes for heat.

Very easy and good - this makes me look like some kind of baking genius, but they aren't hard to make at all! Added skor toffee bits to the top prior to baking and omitted the icing.

Favorite Banana Blueberry Quick Bread

Very good! I made a few changes though...cut the shortening to 1/4 cup and used 2 extra bananas (which made it 5 bananas in total). That made it lower in fat but it didn't taste like a "lowfat" loaf. I also used toasted slivered almonds which were very good. Will make this again!

Italian Sausage Tortellini Soup

VERY good soup! Used hot Italian sausage and made sure to skim the fat often. Forgot to buy a zuchini so I chopped up some frozen asparagus. Add bread and it's a meal!

Baked Scalloped Potatoes

I only had about an hour to make these, so I nuked the potatoes for 15 minutes after peeling them. For more flavour, I added 3 cloves of chopped garlic to the mix, as well as 1/2 cup of shredded mozzarela on top. This recipe was easy and very good!
