Ham and Rice Bake

Reviewed: Apr. 7, 2009
I used cream of mushroom soup and plain ol' frozen veggies. I had a bunch of already cooked brown rice. I fried up my left-over ham from a batch of scalloped potatoes and did up the casserole -- hubby just had to pop it into the oven when he got home. We had to bake it longer, but our oven doesn't work right. I found the ham was too salty (and I LOVE salt) so I think next time I'll try it with pork tenderloin or leftover chicken. Any meat would work in this, really. I bet it'd be great with canned tuna, even!

Tofu Lasagna

Reviewed: Sep. 4, 2012
I could easily double or triple this recipe and it still would just fill the pan. I made it for my family and it received rave reviews! I used 1.5 blocks of tofu, and water instead of milk. I used cheddar because I didn't have any mozza onhand, as well as I topped it off with salsa because I didn't have enough spaghetti sauce.
