Johnsonville(R) Italian Meatballs
This is my first time BAKING meatballs. I've always fried before. These were scrumptious, and I won't be frying anymore! I scaled up this recipe using 3 lbs. Johnsonville Mild Italian plus 1 lb. lean ground beef...I always omit the milk, because my eggs are xl and I don't need the extra moisture. This batch is going to a family reunion tomorrow and will be devoured, as usual. Note: I urge people to use ITALIAN sausage, or a mixture of Italian sausage and lean ground beef. There is a huge difference between breakfast sausage and Italian sausage.

Chantal's New York Cheesecake
Stunningly perfect! I practiced self-control and prepared the recipe as written. At first, I thought the cooking temp was too high, I thought the batter was too thin, too much milk, and I thought it was silly to spend 5 or 6 hours letting the thing cool in the closed oven....I was wrong on all counts! DO NOT alter this recipe. It is everso slightly cake-ish, but don't let that deter you from trying this recipe....it is FOOLPROOF! You can serve this to your priest, pastor, rabbi, or mother-in-law

Spicy Shrimp Creole
Added 1/2 lb. andouille sausage. Superb recipe, with or without the sausage.
