Special Lobster Bisque

I just made this soup last night and I must say, it was wonderful! I read other reviews and took some of their suggestions into consideration - the end result? My husbands words were: "*&%^ Incredible!...this is a DO OVER, and DO OVER AGAIN". I added a can of tomato paste and a bit if white wine as suggested by someone else. I also used rock lobster tails (I can't find canned lobster here), 4 huge shrimp, and 2 cans of crab meat, so it ended up being 'seafood bisque'. There is NONE left today, and I think I'll make a double batch the next time! I'd also add more paprika and a dollop of tabasco just to give it a little bit if a kick. Served it with foccacia bread and it was a huge hit!

French Onion Soup Gratinee

I made this soup today - LOVED IT. It's a simple recipe and I love the flavour of adding the balsamic and worchester. I added a cup of Red wine though and only about 3 tablespoons of butter to the onions. I also used about 4 small bay leaves because I love the flavour they add to soups. Next time though I will add a more concentrated beef broth though to give it a really 'rich' taste. Aside from these little tweaks! PERFECTO! I will make this again..........and again.......and AGAIN!

Rosemary Braised Lamb Shanks

Made these today. I was actually sick, so I propped my laptop open and had my husband do it. He followed the recipe exactly (halved, we did 3 shanks), and it was very good. If I had made it, I would have added more rosemary and thyme, and more spices to the sauce. Next time I will also add mushrooms. The meat was 'fall off the bone" goodness!

Julia's Excellent French Onion Soup

My husband and I made this soup and it was EXCELLENT. He picked the recipe out - which wouldn't have been my first choice based on only 2 reviews but I think he picked it for the bacon. It was WONDERFUL and full of onions. We made it exactly like posted and actually called our neighbour over to enjoy a bowl with us. BRAVO! I've made it again, but used more broth, and I kinda blew it - too watery, but still good. Next time, I stick with 8 cups of broth. Yummy!!!

My Best Clam Chowder

I made this soup for dinner tonight, and it was awesome!!! After reading some reviews though, I did add more veggies to it (simply because I never measure them, but know it was more than called for). I also used FIVE cans of clams and their juice! Next time however, I will fry some bacon and use the fat to add to the trinity for the veggies to cook in. I did add some finely chopped honey smoked spiral ham, simply because I had so much left over from Christmas. I also added some Bay seasoning to it..and served it with sourdough bread. GREAT SOUP...will definitely make this again........and again!
