Adobo Chicken with Ginger

This was good but there was a little something missing for me. Maybe it was just too much soy sauce, or maybe I needed something with a little bit more spice... cumin?

Creamy Pesto Pasta Salad with Chicken, Asparagus and Cherry Tomatoes

This is a GREAT salad! I used a lot of substitutions so I didn't have to go to the store. Whole wheat penne pasta. No artichokes or asparagus; instead I used peas and chopped fresh spinach. Also chopped regular tomatoes instead of cherry size. For the dressing, I used plain greek yogurt (replaced sour cream), fat free miracle whip, and skim milk with some "butter buds" seasoning (replaced buttermilk). I had frozen pesto and chopped green onions from my garden. I mixed the pesto with the rest of the dressing to-taste. This was EXCELLENT! My husband loved it, too... what a great summer dinner and, with all of the healthier substitutions, we didn't feel guilty going back for seconds!

Garlic Mashed Red Potatoes

These were good, but required a LOT more salt and they were pretty bland. Onion powder, garlic powder, and salt helped and they were good.

Pollo Fajitas

My husband and I were hungry for fajitas but too lazy to go out to eat. This recipe was PERFECT... we had everything on hand and will certainly make it again... it saved us easily $40!

Vegetarian Cake

I was leary to try this cake, but it is actually really good! I threw in a small zucchini that I had around, too. The batter was very thick and I didn't think it would be moist enough, but once the fruit and veg is added, there's plenty of moisture and it mixes well. I used whole wheat flour and would maybe add some ground flax seed next time to really drive home the healthy factor.

Grilled Indian Pork Kabobs with Sweet Onions and Red Bell Peppers

These were perfect! I made a half batch and they were fantastic... my husband said this may be the best thing we've grilled yet! I made a flavored couscous dish as a side... so many fresh ingredients, it was the perfect meal!

Bill's Sausage Gravy

LOVE this recipe! I use it any time we have company and everyone loves it. I recommend adding a little more milk... it tends to be too thick. I've also used fat free half and half or whipping cream... whatever I have on hand. I also use maple flavored sausage... yummy!

Alfredo Sauce

This recipe is so easy and fast to make! Alfredo is my favorite sauce, though I had never made it at home before. My husband doesn't usually like it. He liked this flavorful recipe so much that we made it two nights in a row!! I used fat free half-and-half and thickened it with a tablespoon of flour. YUMMY!!

Crustless Spinach Quiche

Broccoli, Rice, Cheese, and Chicken Casserole

I couldn't bear to eat canned chicken, so I used chicken breasts. I also added some cheddar for a richer flavor. This was a good simple dish that didn't take much effort.

Savory Crab Stuffed Mushrooms

These were very tasty, and so easy that my husband made them!! We used imitation crab meat and that worked out well. We used these as an appetizer in a Cajun-themed dinner, and everyone was impressed... even the guests that don't like mushrooms loved this recipe!
