Avocado-Shrimp Salad

Pretty good recipe. Quick easy salad. Omitted the onion as I thought it may overpower the other ingredients.

Easy Arugula Salad

Left out the parm (intolerant) also used red wine vinegar as that is what I had in addition to an arugula mix as that was what was available at the store. Simple, but very good!

Sweet Hot Mustard Chicken Thighs

Indian-Style Rice with Cashews, Raisins and Turmeric

wasn't as exciting as I was expecting given all the glowing reviews. Not much in the way of flavor; kind of bland really. I think I might have overcooked it though...ended up tasting kind of like a couscous dish. I don't think I'll be making this again.

Kheer (Rice Pudding)

I didn't have rose water, but as suggested by another reviewer, I used vanilla extract instead. Used seven cardamom pods and didn't have crushed pistachios so left them out unfortunately. I think I might have cooked it ten or so minutes longer than called for as it was a bit thick, but I prefer it to be a bit thicker anyway. Very rich and creamy if you use whole coconut milk.

Bacon Wrapped Water Chestnuts II

I followed the recipe almost exactly. I thought it was good, but I think most of that was simply because I love sweet food! It tasted kind of like water chestnuts and bacon in a ketchup sauce. I like ketchup, but I'm not a big fan of ketchup-y sauces.

Roasted Beets 'n' Sweets

Avocado-Lime Shrimp Salad (Ensalada de Camarones con Aguacate y Limon)

I don't like cilantro so I left that out. Otherwise, I made it mostly as written except that I used the juice of one whole lime, which I think was more than 2 TBS, next time I'd add at least one more, and I cooked the shrimp using a cajun spice mix and served the shrimp warm with salad on top. The spices from the shrimp made the salad quite flavorful and a little went a long way.

Cornmeal-Coated Chicken

I omitted the flour and used masa harina as that is what I had. I also ran out of onion powder so I had to omit that. I baked the chicken. Before coating with the masa harina mixture, I coated with a small amount of olive oil and added a bit more olive oil during cooking. Pretty good.

Catherine's Spicy Chicken Soup

I changed this recipe a bit due to what I could find at the store and dietary restrictions. I halved the recipe. For half the recipe, I used one medium can of tomato sauce without salt and one medium can of diced tomatoes instead of the diced, whole and souped tomatoes. I also used frozen corn and guessed on the amount and used a can of black beans rather than chili beans. I also skipped the parsley as I don't have any and omitted the sour cream. Served with tortilla chips.

Smothered Green Beans

Oh. my. gah. This is soooooo good. I have never made fresh green beans before and these were amazing. I used six slices of Serrano ham rather than bacon and added it with the beans. I also used veggie broth rather than water as suggested by another reviewer. yummy!!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Excellent. Made it with about a pound of chicken. The rub was the right amount for me. I had to halve the sauce because I didn't have enough apricot preserves and I thought it was the right amount, not too saucy, just saucy enough. It has a really lovely sweet and spicy flavor. It appeared at first more compliacted a recipe as you have to marinate and then create a sauce, but it was very easy!

Lentils with Tomatoes

I used stewed canned tomatoes as that is what i had and also a red pepper. I thought this was good, but lacking a bit in flavor. I had it with chicken tandoori so it went well with something spicy (mixed with tandoori sauce), but I don't see this as a stand alone dish for me.
