Easiest Peanut Butter Fudge

Reviewed: Dec. 31, 2008
I meant to change some of the ingredient amounts as others have suggested, but I forget about doing that. I cut the boiling down to one and a half minutes, because it became frothy. I thought, "Oh no! Here's a failure", but the next step went well, and when it came to the sugar, I used my mixer after folding them into each other. It was like a bunch if peddles before hand as someone mentioned, but the mixer did it well. When it was time to smooth it out in a pan, it had cooled quite a bit, so it was a struggle to do. Next time I guess I'll just work faster. It taste amazing! Thanks

No reason to buy boxed Spanish rice when this recipe is so easy and much more flavorful.

Good Old Fashioned Pancakes

Reviewed: Sep. 5, 2010
Absolutely no changes to this recipe and it was wonderful. I do, however, enjoy pancakes thinner most of the time so I'll try a little more milk.

Tacos in Pasta Shells

Reviewed: Sep. 5, 2010
A fun twist; taco seasoning and more spice does this recipe very well. Unfortunately, I overcooked the shells just a bit so I'll be giving this another try soon. yum!

Simple and delicious. Exchanged cayenne for chili powder and added about 5 T curry; I also like to add peas, potatoes and other such vegetables.

I love this recipe and can now make it from memory. I like to mix it up with pinto beans, chicken, pork, even celery. We add a lot of pepper and garlic to every dish!

Spiced Sweet Roasted Red Pepper Hummus

Reviewed: Aug. 30, 2010
A new staple for hummus! I ground sesame seeds and oil for the tahini (much cheaper and not a lot of work) and also ground toasted cumin seeds.

I prepares this last night. I changed a couple of things: I used 4 red potatoes and 3.5 T of oil. Also, I used canned pea/carrot, and the carrots tore apart, but it still looked good and tasted great. thanks!

Coconut Tofu Keema

Reviewed: Nov. 10, 2007
This is a great recipe; my boyfriend loved it. I altered it a little bit: 1/2 of a large onion, only 3 C tomato sauce, and added a chipotle pepper spice sort of thing instead of the pepper paste. again, it was great :) thanks!

Chai Cupcakes

Amazing cupcakes! I only used the two chai bags (I used vanilla chai). Also, I used applesauce instead of yogurt as I didn't have any; works great.

Cardamom Granola Bars

Reviewed: Sep. 5, 2010
My first granola bars turned out great for our long bike ride! I substituted walnuts for toasted sliced almonds and added .5t more of ground cardamom. Next time I think I'll add a bit more raisin or mix it up with dark chocolate and wheat germ. Very sweet and tasty granola bar!

Caramel Shortbread Squares

Reviewed: Mar. 9, 2008
Well, I intended on letting everything cool before adding the next level, but I did something (who knows what) wrong with the caramel so... it's edible, but certainly not what I was hoping for. I do think I will try these again though; give it more of my attention and time next time around.

Rotini Pasta Bake

Reviewed: Nov. 4, 2007
I used this recipe about a month ago. I omitted the meat and used a 1/2 C onion and 1/2 of chopped bell pepper. I added minced garlic. Three cups of cheese is a bit much. Thanks!
