All-Star Veggie Burger

For a Veggie Burger this was pretty good. Only giving it 3 stars due to the having to alter the recipe to get it to work. As other reviewers have posted it falls apart completely without the addition of eggs. I had to add 2 large eggs to the recipe. I also added cumin and taco seasoning, per other reviewers suggestion. Tasted good. My 19 month old enjoyed it. Husband wasn't so into it. He prefers regular burgers. He ate them though! I started them over medium high heat to brown (and keep the shape) then covered and lowered to medium low to fully cook through. Made them light and fluffy with that crunch on the outside. I did not have Korean BBQ sauce, but I did add half natural BBQ sauce and 1/2 teriyaki sauce. Tasted pretty similar. We put Thai Sweet Chili sauce on the buns and this was spectacular with the patties. Have quite a bit of leftover uncooked mix, going to saute it up tomorrow night and try it in burritos.

Strawberry Cake from Scratch

What a delicious cake. Husband can't get enough of it. I didn't have any problems at all with the cake other than having to bake it for quite a bit longer than what the recipe said. Just kept a watchful eye on it. Added 1 tsp of salt to the dry ingredients to "brighten" the flavors of the cake. I used 2 - 9" rounds and trimmed the excess. A moist, not too dense cake with a delicate crumb. Like I said, delicious. The strawberry flavor comes through very nicely. I paired it with White Cake Frosting I from this site and the flavors went well together. I use my 6qt stand mixer to make all my cakes and I think that this helps by creaming the butter, sugar, gelatin mixture better so that the cake comes out right. Using a hand-mixer or trying to beat it by hand may not have your cake come out correctly with this particular recipe. But that is my lowly opinion. Also, like other reviewers have stated - sift then measure. This makes all the difference! A keeper recipe for sure. Look forward to using it again in the future.

White Cake Frosting I

Excellent, excellent! Used to make my husband's birthday cake. Very easy to make. Followed some reviewers suggestions and cut the shortening in half and substituted an equal amount of butter (dropping the butter flavoring). Really not that much difference in color. Frosting was still a brilliant white. Tasted quite alot like frostings in the tubs sold in the stores. Used it on the Strawberry Cake from Scratch recipe on here. Wow, so good together. Frosting not cloyingly sweet, and heightens the strawberry flavor of the cake. My husband loved it. Going in my permanent repertoire.
