Zucchini Herb Casserole

My family loved this recipe. I used canned tomatoes instead of fresh with Italian seasonings, and I only had enough cheddar for the inside of the casserole so I used mozzarella on top and it was wonderful. Also I used 1/2 cup rice and fresh herbs. I will definetly make this again.

Tomato Pork Loin Chops

This was very good! I substituted fresh tomatoes,fresh oregano,basil,chives and garlic. Also added lots more water so the chops could braise. Very tender.

German Style Kielbasa

This was really good! I only had 2 small apples so I used about a Cup of apple juice with it.Had a sweet and sour taste to the sauerkraut. Yummy! I will make this again.

Rosemary Ranch Chicken Kabobs

MY family loved this but I thought it was just OK. You really have to be a lover of Ranch dressing. Next time I will use less worchester sauce and less salt. I used fresh rosemary from my garden and that did help it I think.

Steak Tip Marinade

Marinated Flank Steak

This was really really good! I also used low sodium soy sauce and instead of oregano, I used ground ginger. I had 1 flank steak and 1 flat iron steak so I marinaded both. I will make this again.

Sirloin Tips and Mushrooms

This was really good. I used fresh mushrooms and diced onions seasoned with seasoned salt and pepper. Also used beef boullion(no water) and a can of red gold diced tomatoes with basil and oregano. I had 1 lb. of sirloin and 1 lb. of chuck steak, simmered for almost 2 hours and the meat was sooooo tender. I served it over rice with french style green beans on the side and crusty bread.I will definitely make this again!

Chicken Creole

I changed this recipe a bit. I used fresh tomatoes instead of canned, and I added water and 1/2 can tomato paste to thicken it a bit. I had some fresh mushrooms in the fridge so I put those in too. I left the salt in the recipe and used lots of cayenne pepper. Then I cut up the chicken in pieces and threw it in the pan with the sauce and simmered for a while. We ate this over rice and it was delicious. If its too hot for your taste, just add sour cream to your plate to cool it down.

Mostaccioli with Spinach and Feta

I used 2 cans of Italian style diced tomatoes, 6 oz fresh spinach, chopped onion, garlic, parsley, plain feta and lemon juice. Also cut up 2 chicken breasts and about 8 shrimp. It was delicious!!!!

Amazing Pork Tenderloin in the Slow Cooker

I also used a 3 1/2 lb. pork loin,and clos du bois carbernet sauvignon for the wine. I cooked it all day on low while I was at work and then turned it up to high for the last 1 1/2 hour. Really tender and great flavor. A nice change of pace from the normal roasted pork loin. I will make again!

Sirloin Marinara

I used Mid's Pasta Sauce, added fresh mushrooms, fresh oregano, basil, and parsley. I also used about a cup of merlot. The meat was very tender. A new twist on my old spaghetti sauce. Served with pasta instead of garlic mashed. Very good!
