Yummy Roll Ups

I have been making these for years, and they are absolutely addictive! Girls' Night, Poker Night, Superbowl, New Year's Eve, Retreats, etc.....they are a great addition to any occasion, and they always go so fast, I have to make huge batches just to make them last for over an hour! They take a little time, but grab a partner and make it a date if you are making a bunch--they are soooo good, and you won't regret it!

Easy Decadent Truffles

I was really excited about this recipe, and I was actually disappointed with these. I followed the recipe EXACTLY, but the truffles ended up really hard when I went to chill them...like, crumbly hard. I had to wait until they thawed out--in fact, I nuked them in the microwave for 20 seconds just to make them pliable to make into truffles. The only way that these taste ok is if these are NOT refridgerated....they need to be served at room temperature at least. Also, these just tasted more like fudge than truffles. In fact, out of all of the truffles I made, people referred to these as the "fudge truffles". So, if you like fudge and don't mind having these at room temperature, go for it. I personally won't be using this recipe again.

Raspberry Truffles

These were really good, and of all of the truffles I made this Christmas, I actually thought these were the easiest! I didn't have the coffee to put in them, so I left that ingredient out. (I was also serving these to kids, so I wasn't sure if they would like the coffee flavor). However, if I make these again, I will probably include the coffee. I rolled in toasted almonds like it said, but I think next time I may try dipping in chocolate, since I like the hard outside and creamy inside. Very good though!

Ghirardelli® Dark Chocolate Truffles

These were soooo good! I did use a little more cream (more like 1/2 cup) and salted butter, but these turned out amazing--as melt in your mouth as you could imagine! I did have trouble like the others with it melting so quickly... should have freezed them before dipping. I ended up dipping in peppermint white chocolate so it had the creamy chocolate buttery center. I made a ton of truffles recipes for my recital, but this one had the best raves from everyone!

Habanero Pepper Cream Pasta

This dish has become a staple in our house--it is absolutely mouthwateringly delicious! The only thing I did differently was to use a fresh habanero instead of dried, (I scraped the seeds and it was still really hot for me, but my husband asked me to keep them in next time--guess I'll eat with kleenex next time I make this!), I added 2 chicken breasts, cooked and cubed (you could also flour them if you want), I changed the parmesan cheese to 1/2 a cup--that was plenty, and stirred in about a cup of chopped spinach right at the end. I attempted this with a jalapeno last time I made it and kept the 1 cup of parmesan cheese--there is a reason it's called Habanero Pepper Cream Pasta--you won't get any spice out of the jalapenos unless you maybe add like, 4 or 5 or more, and the 1 cup of parmesan was too much. I'll go back to the original recipe with the habenero and just cut the parmesan--it's become one of my husband and I's top favorites!!!

Chicken Scampi II

This was absolutely delicious! I followed some other reviewers advice and added red, orange and yellow green peppers and steamed broccoli, and also floured the chicken beforehand. I sprinkled parmesan cheese on top and even my noodle-phobic husband raved about this dish! Definitely a keeper!

Bacon Roll-Ups

I also agree that this recipe only needs 1 package of cream cheese. Something my husband and I have done with this is to add food coloring for holidays. So, when the Colts played the superbowl, we dyed the cream cheese blue, and for Halloween, we dyed it orange, etc. It's a fun way to make these really festive!
