Cheesy Potato and Corn Chowder

This soup was delicious! I changed it a little by using almond milk instead of cow's milk, adding 1 cup chopped facon (fake bacon), substituted carrots for the chilis and also put in more cheese than called for. It was so good, I'll be making this again!

Vegetarian Korma

This was excellent! I used coconut milk instead of cream and it was perfect! Also, I omitted the jalapeno only because I'm breastfeeding, so can't do too much spice. I've made it several times now and it's so good! Great over jasmine or basmati rice!

Blueberry Zucchini Bread

Very good! I subbed 1/3 whole wheat flour (1 cup whole wheat, 2 cups all purpose) and I used a recommendation to sub 1/4 cup brown sugar with 2 cups white. I also used 3/4 cup oil instead of 1 cup, but didn't have applesauce like some recommended. I had enough batter for one large loaf and about 12 muffins. This came out pretty good!

Fabulous Homemade Bread

This was my first time making homemade bread and it was very good. I used honey instead of brown sugar, like other suggested and it just gave it a little bit of a sweet flavor. Everyone loved it!

Granny Kat's Pumpkin Roll

I used fresh pumpkin and instead of pre-made pumpkin spice, I used about 2 tbl cinnamon, 2 tsp fresh ground nutmeg and 1 tsp ground allspice...VERY good recipe!

Asparagus with Sliced Almonds and Parmesan Cheese

This was simple and yummy...I did what someone suggested and blanched the asparagus first, then just sauteed in butter, sea salt and pepper and at the very end, I added the parm and almonds (and garlic). Very tasty!

Chocolate Mint Cookies I

These tasted really good, my only problem (and not sure anyone else had this issue) was that the mints did NOT melt, even when I put them back in the oven for a few minutes!!! Other than that, they were yummy!

Best Sweet Potato Souffle

This dish tastes like Thanksgiving and it goes with anything. Sweet potatoes with a wonderful brown sugar-walnut topping are a little different (and I think better) than the typical marshmallow topping seen during the holidays.

I've tried these twice, the first time I made them regular size and they were very good, but just a little overdone. This time I made them the size suggested and they were good, but not the best chocolate chip cookie I've made.

Cream Cheese Cut-Outs II

These are the only cut-outs I make now because they come out soft instead of crunchy, so it's totatlly a preference thing, but boy are they good!!!

Stuffed Green Peppers

These peppers were a hit at a party I went to...however I made the following changes: I used Cooper Sharp cheese instead (so much better), also I used minute rice and boiled it before stuffing and they took much less time. I also added diced tomatoes inside. Mmmm, these were so good!

Sweet Potato Minestrone

I LOVE this soup! I don't use veg oil to sautee, instead I just use veggie stock & I sautee the onions & carrots, then add some more stock & the beans (don't like them too hard) and then I add everything else. I also ADD about 1c barley & 1/2 box ditilini (tiny soup pasta) and it's just hardier and soooo yummy! I also put about 4 sweet potatoes and make a larger batch so I can share with family and friends...they love it!

Grilled Salmon with Avocado Dip

I made this for a dinner guest and it turned out soooo good. I actually used Pampered Chef Dill Mix on the salmon, which came out perfectly and the avocado dip was just FANTASTIC!!! I used regular organic plain yogurt & it worked just fine. SOOOO good! I did steamed asparagus and diced roasted sweet potatoes as sides, perfect!
