Mocha Bundt Cake

The cake tastes great, but the coffee flavor was definitely lacking. It just tasted like chocolate cake with Kahlua. Not that there's anything wrong with that! :)

Red Velvet Cupcakes

I made these into mini cupcakes and baked them for 13 minutes. I also made the cake flour and buttermilk substitutions. The cake is very light and moist and the frosting is a basic, just like it should be, cream cheese frosting.

Oatmeal Chip Cookies

For me, these cookies were just okay. I thought the flavor was a little flat. The only thing I tasted was the chocolate chips. They also came out too crunchy (even though they were just barely done in the middle) for my liking.

Quinoa with Chickpeas and Tomatoes

This was a pretty good vegan meal. I took the suggestions of others and added red onion and used cilantro rather than parsley. I'm glad that I did. I think it would have been a little bland without the onion.

Homemade Black Bean Veggie Burgers

This was very good! I made the recipe as it was written and baked them in the oven. They held together very well and had a nice flavor. It will be a good base recipe to experiment with.

White Cheese Chicken Lasagna

I made this as the recipe directed but didn't really like it. The sauce was very rich and each bite was overflowing with spinach. Although the it is a creamy sauce, the lasagna itself isn't very creamy. I think this was because there was so much spinach and the chicken doesn't crumble into small pieces like ground meats do.

Quick and Easy Green Chile Chicken Enchilada Casserole

This was easy and very good. I prepared my chicken with a dry rub of taco seasoning and grilled it on my grill pan. Then, like others, I mixed it together with the sour cream. I didn't char the tortillas, just soaked them in the sauce. I also added part of a can of chopped green chiles. I will definitely be making this again.

Ricotta Gnocchi

I only made the gnocchi (cheated with bottled sauce) but I really enjoyed it! Very easy to make and the taste of the ricotta was a nice change from just potato. Thanks for a great recipe!

Campbell's Kitchen Chicken Broccoli Divan

Great recipe for reusing leftovers. I had roasted chicken and potatoes the night before, so I used them up in this dish with frozen broccoli. I microwaved the frozen broccoli first, but didn't cook it all the way - just enough to defrost it so I could pour off the water. I added garlic powder and black pepper to the soup and milk mixture, but no salt because I thought the soup had enough salt already. Finally, I'm sure I used more cheese and breadcrumbs than the recipe called for, but I used enough to cover the whole dish. I wouldn't make it for company, but it was a tasty way to re-use last night's dinner.

Baked Buffalo Wings

These are awesome!! I followed the advice of others and baked them on a rack and dipped them in the sauce after. They were crispy and it had just the right amount of heat for me. I like it spicy but I don't like it to burn my mouth. I will definitely be making these again.

To Die For Blueberry Muffins

These muffins were very good. But, I did have a few problems with the recipe. If you make large, filled to the top muffins, like it's mentioned, it takes 30 minutes to bake. Also, the amount of crumb topping is WAAAYY too much. I only used about a fourth of it. With some changes, I will use this recipe again. The taste was great!

Parmesan Chicken II

I made this last night and it was a keeper! The parmesan crust has a great flavor. The cooking time worked great but I did flip the chicken once so the other side would get brown too. Like some others, I don't dredge the chicken in shallow bowls, I just shake it all together in a ziploc bag. One less dish to wash!

Baked Teriyaki Chicken

The teriyaki sauce is fantastic and very easy to make. With Splenda and low sodium soy sauce it's not too bad for you either. I'm going to use it for other dishes as well.

Perfect Pumpkin Pie
