Pork Tenderloin with Dijon Marsala Sauce

Reviewed: Jan. 20, 2008
This is an excellent, very tasty dish! Definitely one of the best pork dishes on this website. The Dijon Marsala sauce is simply amazing! However, I would not coat the pork tenderloin with Dijon mustard before browning the pork in a skillet; simply brown the pork tenderloin as is before putting it in the oven. Adding lemon pepper on top of the browned pork before inserting it in the oven might be an option. For the Dijon Marsala sauce, I would cut the amount of heavy cream by half since there was lots of sauce left. As I didn't have Marsala wine, I substituted it with sherry and it turned out absolutely great. Next time, I will included half a cup of chopped mushrooms to the Dijon Marsala sauce, which incidentally, compliments pork tenderloin very well. I do not see the Dijon Marsala sauce for chicken or steak; this sauce is made for pork only. I will definitely make this dish again!

Garlic Cheese Chicken Rollups

Reviewed: Jan. 17, 2008
Very good chicken dish! The garlic cheese spread is excellent. However, there was too much Parmesan / bread crumbs mixture; the amount of Parmesan and bread crumbs should be cut in half. This dish compliments very well the Orange Rice Medley recipe from this website. Overall, this is an excellent recipe and I'll definitely make this tasty dish again.

Orange Rice Medley

Reviewed: Jan. 17, 2008
Excellent, tasty, colorful rice dish! Rather than using long grain rice, I used par-broiled rice, which required extra chicken broth and orange juice - based on the amounts suggested for this recipe - to ensure it was properly cooked. Rather than using a white onion for this recipe, I will use green onions instead. I didn't have mandarin oranges and the orange flavor was still very good. I will definitely make this rice dish again.

Ginger Steak

Reviewed: Jan. 16, 2008
Excellent recipe! Very tasty dish! The ginger mixture is a real winner! Next time, I will add a tiny bit more ginger to the mixture since I love the taste of ginger. I would suggest to marinade the steak for a couple of hours or even overnight with the ginger mixture. Pending on how well you want your steak done, the amount of time allocated for broiling it will definitely vary. If you want your steak well done, broil the steak for 7 - 8 minutes on each side. Safe to say, I will definitely make this dish again.

G-ma's Rice

Reviewed: Jan. 13, 2008
Very good dish! However, I changed the way of cooking the rice since I was using par-broiled rice for this recipe. I boiled the rice before adding to the skillet to brown it for 1 minute. Adding cumin to the mix is a great idea; the rice turned out very tasty as a result. I will definitely try this recipe again.

Stuffed Chicken Valentino

Reviewed: Jan. 13, 2008
Very tasty dish. The Parmesan / chives mixture was excellent along with the addition of red roasted peppers as an ingredient. I made a couple of alterations:1. I did sprinkle one chicken breast with olive oil and salt & pepper but sprinkled the rest of the chicken breasts with lemon pepper spice on the other chicken breasts without the olive oil for comparison purposes. The lemon pepper topping tasted better. 2. Rather than broiling the chicken, I baked it at 375 degrees for 45 minutes and it turned out great. I will definitely make this dish again.

Filet Mignon with Rich Balsamic Glaze

Reviewed: Jan. 9, 2008
Excellent, yet simple recipe. I've made this dish on a couple of occasions and it turned out great every time. Instead of filet mignon, I used top sirloin steak and it turned out very good. If you want your steak well done, it will take more than 4 minutes to cook the steak on each side. I will definitely make this dish again.

Roasted Chicken with Risotto and Caramelized Onions

Reviewed: Jan. 6, 2008
Superb risotto! It's one of the best I've ever made! I made a couple of alterations including the addition of extra balsamic vinegar, a smaller amount of thyme and the addition of mushrooms (8 oz. of canned mushrooms without the juices) to the caramelized onions. However, I would suggest fresh mushrooms instead of canned mushrooms along with a few artichokes after the "caramelization" of the white onion and mushrooms as you add the butter with the chopped chicken to the risotto. I accompanied the risotto with the Mediterranean stuffed chicken from this website along with iceberg lettuce with feta cheese. I will definitely make this recipe again! It's a definite winner.

Mediterranean Stuffed Chicken

Reviewed: Jan. 6, 2008
Excellent dish! The feta cheese / cream cheese mixture is VERY tasty! I made a couple of alterations: 1. rather than brushing the chicken with melted butter, I sprinkled lemon pepper spice on top of each chicken breast; 2. further, since I was using jumbo-sized chicken breasts, I baked the chicken uncovered in the oven for 40 minutes, rather than just 20 minutes to ensure the chicken was thoroughly cooked. This recipe goes very well with the roasted chicken risotto with caramelized onion recipe from this website along with iceberg lettuce with feta cheese!

Feta Cheese and Bacon Stuffed Breasts

Reviewed: Jan. 3, 2008
What a great tasty recipe! I added less olive oil than prescribed. However, I will not include the olive oil to the mixture the next time I'll be preparing this dish; personally, I don't believe there's any need for it to be part of the lemon juice / garlic mixture. At best, I would substantially reduce the amount of olive oil. My other suggestions include adding extra crumbled bacon and adding lemon pepper to the lemon juice / garlic mixture.

Deviled Eggs I

Reviewed: Jan. 3, 2008
This deviled eggs' recipe is simply delicious, witnessed by the fact that I've made this recipe on at least 10 occasions. I always combine this recipe either with the cajun deviled eggs or the bacon / cheddar deviled eggs recipe before serving a variety of deviled eggs for supper or for a late night snack. I always add a tiny touch more of paprika to make the make the egg mixture redder.

Chicken Veronica

Reviewed: Dec. 25, 2007
Very good dish! I replaced the pancetta bacon with crumbled bacon from Costco. I would suggest to cut down on the amount of garlic; keep in mind, this suggestion comes from a garlic lover. I added a tiny bit more of sherry wine for maximum effect! I served this dish as is without adding it on top of rice or pasta. Other than that, the recipe is a hit.

Grecian Pork Tenderloin

Reviewed: Dec. 9, 2007
This is an extraordinary dish! I followed the recipe as directed and it turned out great! The taste of the lime on the pork is absolutely remarkable. I added extra marinade on top of the pork tenderloin before inserting it in the oven at 400 degrees Farenheit for 30 minutes and it turned out to perfection. (Since it's winter and quite cold here in Ottawa, Canada, I couldn't use my bbq so I used the oven instead). I served this great dish with Asiago toasted cheese puffs (see recipe on allrecipes.com) along with risotto with artichokes! What a great combination!

Cream Cheese, Garlic, and Chive Stuffed Chicken

Reviewed: Dec. 9, 2007
What a great recipe! The cream cheese mixed with the chive is extremely good. I made a few alterations since I didn't have sliced bacon available. I replaced it with crumbled bacon and added it to the cream cheese / chive mixture. I also added one finely chopped jalapeno pepper to the mixture and the taste of it was very good. I sprinkled a bit of lemon-pepper on top of the stuffed chicken breast! What a fanastic taste!

Chicken Paprikash I

Reviewed: Dec. 5, 2007
Very good dish! Instead of a whole chicken, I chopped up one jumbo chicken breasts (or 2 average-sized chicken breasts). I doubled the amount of paprika and added a bit more of chicken broth and it turned out great. I served it with a side-dish of pasta (from allrecipes.com) rather than serving it atop ordinary / unflavored pasta.

Chicken and Bowtie Pasta with Asiago Cream Sauce

Reviewed: Dec. 5, 2007
Excellent dish! One of the best pasta dishes I've prepared! I didn't have bowtie pasta so I used rotini instead. Asiago cheese is simply awesome in a pasta dish. I added a bit extra of Asiago cheese and garlic than required and it turned out fantastic. The presence of prosciutto and mushrooms is a great idea. I'm tempted to add sun-dried tomatoes and / or julienned red peppers the next time I'll prepare this wonderful dish.

Asiago Toasted Cheese Puffs

Great bread appetizer! Very tasty! The ingredients including garlic, oregano, thyme and parsley, really add a lovely taste to the bread. This is a great way to kick-start a meal witnessed by the fact that it is my third time making this tasty appetizer.

Feta Chicken

Reviewed: Dec. 5, 2007
Very good recipe! I added extra feta cheese and included sun-dried tomatoes into the mix and it turned out great. Next time, I'll try tomato pesto or sliced plum tomatoes along with the feta cheese. I may skip the breadcrumbs and replace it with lemon-pepper spice.

Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Dec. 5, 2007
Excellent pasta dish! Very tasty and creamy! Other than the fact that I doubled the amount of Parmesan cheese, I followed the instructions as is and it turned out great. May I suggest the addition of 1 cup of sun-dried tomatoes for a serving to 4 people when you the Parmesan cheese at the very end.

Muenster Chicken and Mushrooms

Reviewed: Dec. 5, 2007
Very tasty dish! I followed the recipe as indicated with the exception of the Muenster cheese (I grated it rather than cutting it in slices) and used less milk. Next time, I'll stuff the chicken with the Muenster cheese, mushrooms and I'll add crumbled bacon.
