Mushroom and Leek Soup

Very good...and i'm not a big fan of mushrooms. I dbld mushrooms & leeks as one user did b/c I chunks in every bite. I modified a little, 3/4 c sherry, 2 (14oz) cans beef broth then filled the cans with water and added to the soup, plus another 1/2 cup. I gave a couple shakes of garlic powder. Didn't have orzo, so i used this mexican pasta 'Fideo'. Worked fine. I cooked as the directions stated.

Garden Veggie Cheese Soup

Surprisingly good...made 1/2 a batch. Used real onion, didn't have onion pwder, chopped (1/3c). Doubled the carrot & omiitted the sherry, didn't have any. I think the cornstarch ration was a little too much b/c it make it took away from the chz taste a little, so i added another ounce of cheese. I'll see how it is tates on day two. Day two: Made white rice and added to the soup. I think its even better like this.

Raspberry Lemon Muffins

Made this recipe exactly as written and it was super! Next time, I'm going to add a lil' more lemon juice (1/2 TBL)and a little more zest. This is just my preference. I'm not sure why some comments said more fruit, I felt one cup was just enough fruit in each bite. More fruit would overload it with seeds from the raspberries. Next time, i'm trying blueberries. Its a definite keeper.

Baby Back Ribs

It was good/simple recipe for oven cooked ribs. I pulled the membrane off using a knife to make the first cut, then used a paper towel to pull it off. Seasoned & marinated over night. Make sure to use heavy duty foil, i had no problems w/leaking. I cooked mine for an hour at 350, then another hour at 300. Then i removed from foil and broiled for 10 min w/extra bbq sauce. Make sure not to burn ribs.

Home-Style Mashed Potatoes

Great recipe. I never made mashed potatoes with the whole peel and i was pleasantly surprised it wasn't overloaded with the peels. No more peeling for me. Husband loved it too. The only thing i did a tad different, is i reserved some of the water after the potatoes were cooked. Then when the recipe calls for milk, i added some of the water with the milk. Salt to taste. Its a keeper.

Asparagus Cashew Rice Pilaf

I made 4 servings, but it seemed it didn't call for enough veggie broth. I tasted the mixture once the intial broth amount was absorbed, i still had hard rice and the spaghetti. I added more broth (eyeball it), mix really good make sure the spaghetti is submerged (next time i will break into smaller pieces) and reboil it and simmer a little longer. Adding the addl broth took away the onion and garlic flavor. Next time I will add more onion and garlic. Also, since ours came out a little bland we put some soy sauce on it. I think next time instead of using table salt i will try using soy sauce. Also didn't have any cashews so i used a pack of honey roasted peanuts, just as good. Its a keeper.

Tater Tot Hot Dish II

I made a smaller portion of this recipe for my husband and I. I also used some suggestions and took 1/2 of the soup mix and added it to the meat until well blended. Then with the other 1/2 of the soup I added some milk to make it more creamy then added it on top of the tater tots. I added a little chdr chz to the dish too. Served with a side of mixed veggies, its a keeper.

Chorizo Burger

The burgers turned out a little dry for me. (Used George Foreman Grill) Next time I am going to add some sauteed onion to the meat mix (husbands suggestion) and some type of sauce to give it some moisture. Also there was way too much sauce, it was very good though. Also used cheddar and added lettuce and tomato. Will definitley try again and recommend.

Baked Potato Soup

Great Soup! My 1st time making potato soup. I followed the recipe to the T(serving six), except i used turkey bacon which doesn't provide grease, so i added a little butter to the bacon. It gave me about 1 tsp grease. I added a lil olive oil to the oinon/garlic mix. I came upon trouble when i added the flour/s&p&basil to the onion/garlic mix. It was very dry due to lack of liquid (which comes next). So as i added the broth gradually but it was still very lumpy & doughy, so i then used my whisk to bring it back to a soup consistency. My additions: 1 - 1 1/2 cups of ckn broth(depends how thick you like it), 1/2 cup h&h cream, 1/2 tsp pepper, 1/2 salt. I didn't cook my potatoes before hand so i cooked on low for over an hour b/c we weren't in a rush to eat dinner, but the potatoes were done after 30minues. I topped it off with all the toppings, terrific. Will be making again and again, my husband and i loved it, looking forward to the leftovers, thanks for the great recipe.
