Sweet, Sticky and Spicy Chicken

Have you ever had lettuce wraps from PF Chnag's??? This is it! I had everything already in my kitchen so I made two batches of the sauce then I used about half to 'season' some ground chicken. I made it like you would taco meat then wrapped it in lettuce. It was perfect!!! This was AWESOME!!

Fish Tacos

It was tasty as far as flavor but I need to work on the frying part... my fish and tortillas were greasy... next time I'll try it with flour tortillas (not fried) because I think that will taste better. **Update** I tried this recipe again and it was FANTASTIC!!I sliced the fish into thinner filets and used flour tortillas and it was sooo good!! I served it with black beans and brown rice and can't wait to have the left overs... I'm so glad that I tried it again!!

Wild Rice Chicken

Yummy! Even though I cooked the wild rice per the directions it was still a little hard... Next time I will 'over cook' the wild rice. Other than that this was really tasty.

Super Sausage Stuffed Mushrooms

I took the idea of this recipe and made it simple... one package of Jimmy Dean Sage breakfast sausage, crushed red pepper, bread crumbs, one egg and parmesan cheese. They were so yummy, quick to make and a huge hit at Thanksgiving this year!

Sweet Potato Casserole II

Awesome Steak Marinade

This was great! i didn't follow the recipe exactly but used what I had in the kitchen (a mostly full bottle of A-1)and even my grandmother who doesn't like any other seasoning except salt, pepper and a little garlic powder loved it. That's saying something.

Peanut Butter Cup Cookies

Not my favorite. I made them and they looked great but I don't know if I didn't cook them all the way or they were just a doughy type cookie. I took the left overs to some friends house and they ate them. If I were to attempt them to make them again I'll cook them a little longer.

Annie's Fruit Salsa and Cinnamon Chips

All I can say is FANTASTIC!! I read a couple of the other recipes and only added the preserves and a little Splenda and it was perfect. Also it is better to toast the chips longer than it is to pull them out earlier. This was a huge hit.

Broiled Tilapia Parmesan

Very tasty! I made the sauce and was thinking that it sounded a little fatty but decided at the last minute to throw it on the fish and it was incredible! My husband has requested that I make it a second time this week and he's not a big fish eater. Great recipe!

I have used this recipe for several years now and it's ALWAYS a winner! This is my husband's favorite cookie and when I used to work in an office it was requested on more than one occasion. it's quick and easy and the best snickerdoodle you'll ever have.

Maple Glazed Ribs

Not my favorite! I made the recipe as stated and it was not good. Because I had based dinner around having ribs and I decided to doctor it up as best as I could. (added so much stuff I can't even remember) Then I cooked the ribs and they were ok. My husband liked them as they were but I had to eat mine with some plain old BBQ sauce from the pantry. Gave three stars because at least my husband and pup dog like it.

Throw Together Mexican Casserole

Oh My Goodness I've died and gone to a Fiesta in the sky! This dish is great and really easy to make. It's as flavorful as you make it. I didn't have any olives or taco sauce (which I'm still not 100% sure what that is). Instead of those things I added fresh diced tomatos and 1/4 cup of Tabasco Chipolte which is a beautiful smokey kick. Next time I will add some cheese and I'll also use this recipe for taco filling. Great recipe!

Curried Tilapia with Mango Salsa

I gave it a four but I'm thinking it has something to do with the situation I was in and not the recipe. So, I made this wonderfully beautiful presentation of a dinner with all of the promise that the ingredients list gives you and then we had to wait almost 30 minutes to eat because the cable guy was here. By the time we ate it, the fish was lukewarm. I can't wait to make it again (sans the cable guy) and eat it at the peak of flavor.

Honey Baked Chicken II

Oh Man!! This was sooo good. I used the recipe as a base and went from there by adding cayenne pepper to give a little kick and I think I doubled the curry powder. The only other modification I made was I used half the butter and that was plenty for me... this will go into the favorites folder for sure!!

Blackened Tilapia with Secret Hobo Spices

To me it lack any real flavor except HOT. After reading the reviews I reduced the cayenne and salt by half and it was kinda bland and too spicy. This is coming from someone who loves spicy food. I even ran the fish under water to rid it of some of the spices and still too hot. I'll work on the mix (since I have some left over) and see what I come up with.

Pineapple Upside-Down Cake VII

Can we get 6 stars?!?!!! I made this for Thanksgiving and it was AMAZING!! Part of the beauty of this recipe is the simplicity. It was the single most talked about dessert at TG and there were at least 5 other options! I did what a couple of others did and used the juice from the pineapple slices instead of the water in the cake batter. Also, I didn't have an iron skillet so I made mine in a glass 13x9 dish (it had to cook a little longer than the box directions, but just test with a toothpick). It came out moist and so freakin' yummy I don't know what else to say. Make this recipe!! NOW!!

Mini Pumpkin Muffins with Orange Drizzle

Sorry but these did not do it for me... or any of the 15 hungry people that I had over for Thanksgiving this year. They were tasteless. I followed the recipe almost to the 'T' including heating up the pumpkin which was a total waste of time and energy. The only change that I made was to add MORE ginger (about 1/2 a tsp) because I love ginger and these muffins were totally tasteless. Will not make again.
