This recipe was phenomenal! I made it last week for a Mexican-themed potluck party at my job, and everyone loved loved LOVED it! One guy even demanded I make it again, saying he'd even pay me for it, ha! I'd also made some extra for my boyfriend and I at home and I took some of that with me when I went to see my mom and brother over the weekend so they could try it, and they loved it too - especially my mom! My brother thought it was a bit too sweet, but my mom was borderline obsessed with it! She was even trying to get me to make it again while I was visiting and there while I was visiting, saying we could go out and get the ingredients right then and there! She also asked for the recipe, saying she wanted to make that for whatever next party they have at at her job! This cake was just a huge hit all around. My boyfriend thought it was the best thing I've ever baked (and I've baked quite a few cakes & such, including this banana nut cake that we both love).. I was almost tempted to say the same, but I'm not sure - at the very least, though, it is definitely up there, top 3! As for the recipe, I pretty much did everything in the original recipe, except I doubled it all in order to make enough for both the party as well as my boyfriend and I at home. Doubling everything went pretty well. I struggled a little with the crescent rolls - trying to stretch it out as the recipe mentioned.. That was what took the longest. Also, I drizzled honey at the end, as mentioned by reviewers.

My brother's favorite kind of cake is carrot, so I made this for him for our family's Easter gathering, and he and everyone else loved it - said it was great! And so did I. Very moist and flavorful - can definitely see making again!
