Naked Shrimp Pasta

Excellent recipe! Beautiful, simple, smells great when family is coming home for dinner. Even my vegetable-phobic 10 year old ate without one complaint, and that's really a compliment!

Witches' Brew

Gingerbread Boys

I have a delicious gingerman recipe that I have used year after year, but after reading these glowing reviews, I had to try this one. Hmmm...not sure what the fuss is about. The taste is very good, but I half'd the recipe and am baking them now. The taste is OK, but they spread so much that they lose their shape in baking. The dough becomes too soft to work with very quickly, so I am constantly putting it back into the fridge and having to wait to roll out more than 2 pans of 6. I have also had to cut the oven temp and time way back. The original recipe says 190 C, but I cut it back to 180 when the first pan came out almost burned. I also cut the time back to 6-8 minutes. To be fair, I'll try this again with the measurements as listed, but am not convinced that I will see different results.

Linda's Lasagna

I mixed up this recipe exactly as written but baked it with foil on top to keep it from drying out (as suggested by another reviewer). Tasty but WAY too salty. I was suspicious of 2 teaspoons of salt but added it anyway. Would be better with 1 teaspoon.

Yummy Sweet Potato Casserole

To die for! I took advantage of some of the suggested changes and have rewritten it to suit my tastes and dietary needs, using 1/2 cup brown sugar Splenda instead of brown/white sugar and 1/2 c. of condensed milk. I also blended the ingredients to make a fluffy purée. I put it all together about 6 hours before Thanksgiving dinner was served and refrigerated it. It was still perfect (no separation of ingredients) and I've passed the recipe out to several friends. Thanks to the original poster and to the others who made modifications that suited my dish. This is an EXCELLENT recipe.

Dreamy Fudge Bar Cookies

I made the recipe exactly as written then had to add 2 T of water to the oatmeal/flour mix to make it useable. It looked promising going into the oven, but even with 10 extra minutes of baking, the bottom never cooked and I can't get anything out of the pan. You would have to eat this with a spoon. Off to make something else for my son's birthday tomorrow.

Shrimp Scampi Bake

Yum! This is quick, easy and delicious. I've made it twice and it gets 5 stars both times. The first time I made it according to the recipe - perfect. The second time, I made the following modifications: 1) put a layer of thin sliced zucchini on the bottom of the baking dish and added the shrimp and sauce on top before pouring on the sauce 2) added some cayenne pepper to the butter sauce 3) substituted fresh chopped cilantro for the parsley 4) used unsalted butter for the sauce, so added a teaspoon of coarse ground sea salt Even my picky "I hate all fish" 11 year old will gobble this up over a dish of spaghetti. Thank you for sharing this recipe. It has become a regular Friday night dish at our house.

Spooky Witches' Fingers

These are AMAZING! I made them for a class of 4th and 5th graders and they were a huge hit! Not only are they easy to make, and delicious, but they are also fun for kids to make themselves. This is definitely a keeper recipe.

Apple-Stuffed Acorn Squash

Hmmmm...this looked really good, but did not turn out well. The apples were dry and tough and the squash took 30 minutes longer to cook than planned. The taste was nice, but the texture and appeal were lost. I get a much nicer squash when baked cut-side down in a little water.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This is an excellent, easy to prepare recipe. I actually had everything in my kitchen and had fresh soup ready for my hockey players in 45 minutes. Even my picky 8-year old ate it without complaint! That's saying something!

Quinoa, Beet, and Arugula Salad

Excellent. I've been eating on this all week and, without the dressing, keeps very well in a closed container in the fridge. I did leave out the sugar and the goat cheese (because I can't have it and didn't have it, respectively). This is also very good with chopped raw veg (tomatoes, mushrooms, broccoli florets) thrown on top before serving. It makes a very healthy and filling lunch. Thank you to the person who submitted the recipe.

Mexican Chocolate Cake

As an addendum to me first review, when I doubled this recipe, I replaced the veg oil with applesauce and used butter instead of margarine. I also used plain milk. The cakes took about 45 minutes to bake under this condition, but are no less delicious.

Quick Chicken with Asparagus and Provolone

This recipe is a keeper! Even my very picky 8 year old ate everything on his plate. I did make some personal modifications: To make it healthier, I used only 3 T of olive oil and could have gone down to 2 T. I also only used 1 egg and unseasoned bread crumbs, adding herbs de provence, salt and pepper for flavor. I chose chicken breast strips and broccoli (kids won't eat asparagus) and served the plate with homemade, whole wheat mac and cheese. Very healthy, very yummy dinner.

One Bowl Brownies

There's nothing brown about these brownies unless you add cocoa powder. I added mini choc. chips to mine because I didn't want to disappoint my kids ; they were looking for "BROWNIES". Doubtful that I will make these again.
