Mexican Chicken Soup

This was really tasty. Per the suggestion of another reviewer, I added in black beans and corn in the last 15 minutes of simmering, and used home-made chicken stock. I made my own tortilla strips (cut corn tortillas and sprayed with olive oil, then baked at 425 for 12 minutes). Excellent. Maybe next time I'll add in some jalapenos.

My review is just for the sauce (I used Gorton's battered fish portions since it was for a party and I didn't want to be tied to the kitchen), and it was terrific! I didn't have dill but it was still wonderful!

Real Homemade Bagels

Very tasty. My dough didn't "stretch" even after letting it kneed in my KitchenAid for the recommended time but it still turned out great. Also, I used less honey in the water but that was fine.

Belgian Waffles

Super yummy! I used almond milk and only 1/2 cup butter, and let it sit overnight in the fridge. It did not double but it was very foamy/bubbly. Wonderful taste and texture. We made it for a playdate with a bunch of 3-4 year olds and it was a total hit with everyone. I had a regular waffle iron and this recipe yielded approximately 10 (8") waffles.

French Baguettes

Wow... I was very pleasantly surprised at how well this turned out! I made this with my KitchenAid. Mixed water, yeast and sugar together in a bowl and let that sit for 10 minutes until foamy. Then mixed salt and flour together in the mixer bowl (ended up having to use 3 cups of flour), and mixed in the foamed yeast mixture. Kneaded that for several minutes on medium on the KitchenAid and then let rest as indicated. used a whole egg for the wash. Also, baked at 425 and put a small dish of water in the oven when I put the bread in to make for a crispier crust.

Mom's Zucchini Bread

Very tasty. I had two zucchinis, which ended up being about 2.5 cups (or maybe even 3) and used all of that. Also, used a little less oil (3/4 cup). Great consistency. Per other reviewers' suggestions, I made a crumb of margarine, brown sugar, cinnamon, chopped walnuts and sprinkled it on the top of the loaves about 20 minutes into baking. For a small loaf, it took just over 40 minutes and for a large loaf, it took just over 60 minutes.

Old Fashioned Pound Cake II

Fabulous!!! I used about 3T fresh squeezed lemon and added about 3T lemon zest (left out vanilla) to make a lemon pound cake. This recipe yielded two loaf pans plus 4 jumbo muffins. Took the muffin pans out at 35 minutes, and the loaves out at 60 minutes. Beautiful texture, color and taste!

Pretty yummy. Like others, I drizzled a little oil and vinegar on the salmon vs. using the full amount on the recipe. Baked at 425 for 20-25 minutes.

Buffalo Chicken Wings I

Fantastic! I baked mine on a rack over a cookie sheet on 425 for 40 minutes, then turned it up to 450 for the remaining 5-10 minutes. They crisped up nicely. I put all the wings in a large bowl and poured the sauce over to coat. Much cheaper than take-out and just as good, if not better! Thanks for the recipe!

Delish! Didn't have molasses so just omitted that, and it was still wonderful. I baked at 430 for 45 minutes. Sprinkled with chopped green onions. Very tasty.
