Spinach and Leek White Bean Soup

This is a four star recipe with potential to be five stars. I used orzo instead of couscous because I like the texture better. I agree with other raters that there are too many cannelli beans in this. A five star version of this soup is less cannelli beans and more orzo/couscous. As suggested by some raters, I used rosemary/thyme/sage instead of cumin. I also added mushrooms and more garlic. This combination may be the best soup I have ever made...

Easy Indian Style Okra

I really enjoyed this! I used frozen okra, olive oil instead of butter and added a dash of cinnamon, but other than that, I followed the recipe as written. I may try and make this into a a one dish meal by adding garbanzo beans and diced canned tomatoes.

Spicy Sweet Potato and Coconut Soup

This was really good and I will definitely make it again! It tastes even better as leftovers because the sweet potatoes have a chance to soak in the spices more. Just be sure your sweet potatoes cook all the way through. Part of one potato ended up a little crunchy, so I did my best to only put the soft pieces in the soup.

Spinach Casserole

I give this 3 stars as is, but it has a lot of potential. It just needs to be spiced up, it is lacking flavor. I do like that the ingredients can easily be made healthier without taking away from the texture by using whole wheat, fat free sour cream and 1% cottage cheese. Next time I am going to add fresh garlic, onion, thyme and a pinch of nutmeg. I think these changes will make the recipe a 5 star recipe.

Spaghetti Squash I

It definitely needs to be cooked for more than 30 mins, more like 35-38. When it is done it is a darker color, if part of it is still whitish, it will be crunchy! It was a great recipe, I just added a little bit more garlic. Everyone loved it!

Feta Veggie Quiche

Great recipe and very easy to make! The only thing I changed was I used roasted red peppers instead of broccoli. If you use the regular pie crust instead of deep dish, you will have some extra filling. I used 2% milk and it was just right.

Key Lime Pie VII

Someone said this recipe called for about 20 limes. I found that 9-10 limes was plenty! It was an amazing recipe and really easy to make. Everyone loved it and I will make it again soon!
