Spinach and Leek White Bean Soup
This is a four star recipe with potential to be five stars. I used orzo instead of couscous because I like the texture better. I agree with other raters that there are too many cannelli beans in this. A five star version of this soup is less cannelli beans and more orzo/couscous. As suggested by some raters, I used rosemary/thyme/sage instead of cumin. I also added mushrooms and more garlic. This combination may be the best soup I have ever made...

Easy Indian Style Okra
I really enjoyed this! I used frozen okra, olive oil instead of butter and added a dash of cinnamon, but other than that, I followed the recipe as written. I may try and make this into a a one dish meal by adding garbanzo beans and diced canned tomatoes.

Spicy Sweet Potato and Coconut Soup
This was really good and I will definitely make it again! It tastes even better as leftovers because the sweet potatoes have a chance to soak in the spices more. Just be sure your sweet potatoes cook all the way through. Part of one potato ended up a little crunchy, so I did my best to only put the soft pieces in the soup.
